日式兩種番茄炒蛋/Stir fried Tomato & Egg

雞蛋 Egg-2顆
鹽巴 Salt
牛奶 Milk-2大匙
奶油 Butter-1小匙
牛番茄 Tomato-1個
小番茄 Cherry tomatoes-150g
砂糖 Sugar-1/2小匙
味醂 Mirin-1小匙
Tabasco醬-1/4小匙
法國麵包 Baguette-6片
橄欖油 Olive oil
雞蛋 Egg-2顆
鹽巴 Salt
牛番茄 Tomato-2個
蔥 Scallion-1支
日式高湯 Dashi-80cc
醬油 Soy sauce-1大匙
味淋 Mirin-1大匙
清酒 Sake-1大匙
砂糖 Sugar-1小匙
白飯 Steamed rice-1碗
[Western style]
Preparation
Tomato & Baguette
(1) 1 tomato, remove the stem and cut into small chunks
(2) Cut 6 slices of baguette
(3) 150g of cherry tomatoes, blend into purée
Egg
(1) 2 eggs
(2) Add some salt and 2 tbsp of milk, beat it gently
Instruction
Baguette
(1) 1 tsp of olive oil
(2) Put to medium heat
(3) Put in baguette slices
(4) Drizzle some more olive oil on top
(5) Fry until golden brown and take them out first
Egg
(1) 1 tsp of butter
(2) Put to medium heat
(3) Pour in beaten egg, and cook it until the doneness you prefer
(4) Take the stir-fried egg out first
Sauce
(1) Some olive oil
(2) Add tomato
(3) Add some salt
(4) Add tomato purée
(5) 1 tsp of mirin
(6) Some tabasco
(7) 1/2 tsp of sugar
(8) Cook until the sauce reduces
(9) Add stir-fried egg back
(10) Turn off the stove
Combine
(1) Put stir-fried tomato & egg on top of baguette slices
(2) Add salt & pepper
(3) Sprinkle some parsley
[Japanese style]
Preparation
Tomato & egg
(1) 2 tomatoes, remove the stem and cut into small chunks
(2) 1 stem of scallion. Slice the white part diagonally, and chop the green part into small rings
(3) 2 eggs, beat it gently
Instruction
(1) 1/2 of oil
(2) Put to medium heat
(3) Add white part of scallion
(4) Add tomato chunks
(5) Add 80 cc of dashi
(6) Add 1 tbsp of sake
(7) Add 1 tbsp of mirin
(8) Add 1 tsp of sugar
(9) 1 tbsp of soy sauce
(10) Simmer for 1 minute
(11) Add half amount of beaten egg and cook it through
(12) Add the rest amount of beaten egg and cook it until desired texture
(13) Put the Stir fried Tomato & Egg on top of a bowl of steamed rice
(14) Sprinkle some green scallion rings
