Slice ginger thinly.
Step 2
Use knife with serrated blade to remove florets and old looking parts of Gai Lan, leaving the tender parts, wash and set aside.
Step 3
Heat oil in wok, lower heat to fry ginger slices for about 8-10 minutes.
Step 4
Turn heat on high, add Gai Lan, add small amount of broth, salt and sugar and mix well, stir fry Gai Lan till 70% cooked, turn off heat and cover with lid for 1 minute.
Step 5
Remove Gai Lan from wok, drain water with strainer, discard ginger slices, serve on plate.
