Brilliant! I sometimes struggle with what to do with stale sourdough bread. My dog usually get's it but he too prefer fresh😅. This salad fits the bill just perfect. Thank you for making this video.

My Grandmother made this salad when I was young. Didn't care much for salads back then. Yours looks really good. Nice summer meal.

Thanks for your recipe!..I'm Italian so I know panzanella salad very well...we also use a special type of dried bread from South Italy called "frisselle". But your recipes are always the best! In the end following your videos I've improved my way of preparing home made bread with sourdough...

Granted, we don’t get your tomatoes here in the UK, but… I used heirloom tomatoes from Waitrose, with the best olive oil I have in stock, cucumbers, red onion and my own basil. Did it with the cider vinegar (no emulsion) - magnifique! How an Italian, Croatian or Greek would rate it I don’t know, but an empty salad bowl in Tunbridge Wells speaks volumes 😄.

Those are humongous tomatoes! Basil is my favorite herbs for tomato cucumber salad. Unfortunately is in my home garden. I love those giant crunchy sourdough croutons. Will make that tomorrow with parsley instead. Thanks Philip for the great summer salad idea with a twist

So wonderful this recipe, being one of the converted and from an Italian background I know it well. Italian cuisine with its oh so simple and few ingredients is to my mind< and I might be just a tad biased! work class, from top to bottom and from side to side each variation in dish is stunning but all with that simple few fresh ingredient, I was luck to be weaned on it! Panzella happens to be my favourite too! You've presented a wonderful, enticing version. I prefer to use old balsamic vinegar which adds its own flavourful element. Look forward to eagerly to your preparations using sourdough.

Just read you newsletter,between Florence and Siena. Just,W🍅W. and that for the salad as well. I’ve been making Salmorejo using stale sourdough and mozzarella and watermelon salad and sourdough croutons,lots and lots more recipes.👍🏻

Dry bread is perfect for Spanish "Migas." Break it up into crumbs and fry with some bacon, chorizo and scrambled egg mix in lard. Delicious.

I don’t use cucumber. But instead use large plump capers. Rinsed to reduce salt. And when I can get them, caper berries.

Hello Phil. Thanks for the video. I've never been a salad-person having grown up on meat and fresh veggies from my fathers' garden. Now I'm old and stuck in my ways I've decided it's time to change and what better way to do it than to incorporate old sourdough. Thanks for the tip, Phil.

OK, feedback time. Are you sitting comfortably? Then I shall begin. My wife puts salads in Kilner jars and we take them to work for lunch. Liquids on the bottom followed by wet stuff, then the dry rabbit food stuff. The salads usually stay crispy for 3 to 4 days. With croutons on top, the croutons loose there crunch over night, but taste really nice after everything gets mixed together. They definately add an extra dimension to salads.

I forgot, instead of garlic gloves i use garlic olive oil. Lot of garlic in a bottle with oil, also some herbs and is ready. You can keep it very long and is easy to use. So you dont need to throw the garlic away...

Unless it's moldy, there's seldom any good reason to throw out stale bread of any sort. Stale bread can be ground into bread crumbs for a coating, used as a thickener in homemade soups, used to make croutons or used in place of crackers with a bit of EVOO, salt and cracked black pepper. Our grandparents would have been shocked at the casualness with which we too often dispose of food.

I remove it but there is no reason why you couldn't peel it and toss it in. Be prepared for a garlicky bite every now and again :)

@@CulinaryExploration I left the garlic out! Made the salad yesterday and it was so good. Added some crispy toasted kale and a little bit of tuna I had on hand. Will definitely be making this salad regularly. Thanks for the recipe! Used the roasted garlic as a spread on toast :D
