🍓Strawberry and lime jelly
300 g strawberries (2/3 lb)
300 g mashed strawberries (2/3 lb)
50 g sugar (1.8 oz, you can substitute brown sugar, Jerusalem artichoke syrup or maple syrup)
1 lime
100 ml water (3.3 fl.oz)
12 g gelatin + 60 ml water (0.4 oz + 2 fl.oz)
berries for decoration (strawberries + raspberries)
🍓Prepare the jelly.
1. Wash the strawberries and cut into small cubes.
2. Soak the gelatin in water, leave for 5-10 minutes to allow the gelatin to swell.
3. Combine the strawberry puree and the chopped strawberries, add the lime zest and lime juice (1 fl.oz).
4. Add the sugar, put on the heat, bring to a boil and simmer for a few minutes.
5. Collect the foam.
6. Add the swollen gelatin and stir.
7. Pour into molds and set aside in the refrigerator for 6-7 hours.
8. Decorate with slices of strawberries and raspberries, sprinkle with powdered sugar and crushed pistachios.
