What probe are you using? Looks like the wood might need more time. Smaller splits and more oxygen should help. I use oak all the time

ThermoWorks Smoke X4. The wood is seasoned 2-3 years, so it should be good. I had to adjust to making smaller splits compared to my maple.

Is your oak dry aged for 2 years? I put water pans in to keep the temps up

Probably more than that, but some of it was damp because it was uncovered. My smoker has a fairly big water pan. Most of my issues that day came from me not being used to the oak. Normally, I cook with maple, exclusively. I hadn’t cooked on just oak in several years and my brain is calibrated to maple.

@@smokerschuggin475 I’ve cooked with oak for 6+years.. it’s very difficult when wet or not aged . I do. Oak. Whole cook usually apple and pecan the first few hours
