Stuffed Portobello Mushrooms
Servings: 2-3
Prep Time: 10 minutes
Cook Time: 15 minutes
Ingredients:
• ½ purple onion, diced
• 1 container baby bella mushrooms, chopped
• 1 bag baby spinach
• 2-3 cloves garlic, minced
• 2 tsp Tuscan Herb seasoning, divided
• 4 oz vegan cream cheese
• 12 portobello mushrooms, cleaned with stems removed
• 1 stick vegan butter, melted
• 1 cup Japanese panko bread crumbs
• ¼ cup parsley, chopped
• 1 cup vegan parmesan cheese
• Olive oil
Directions:
1. For the filling: Sauté purple onion, chopped baby bella mushrooms, spinach, garlic, and 1 tsp Tuscan Herb seasoning on medium low heat. Transfer to medium sized bowl and mix in cream cheese until combined.
2. Melt stick of butter and combine with bread crumbs, parsley, parmesan cheese and 1 tsp Tuscan Herb seasoning.
3. Stuff portobello mushrooms with filling. Top with bread crumb mixture.
4. Preheat Pizza oven to 425°. Grease baking dish with olive oil. Arrange stuffed mushrooms in baking dish. Bake in pizza oven for 8 minutes or until topping is golden brown. Enjoy!
