Lamb chop with roasted garlic sauce

材料:
小羊排 8支
羊醃料:
海鹽 1/2小匙
孜然粉 1/2小匙
黑胡椒粉 1/2小匙
E.V. 橄欖油 1大匙
奶油 1大匙
橄欖油 1大匙
巴西利碎 少許
小番茄 6顆
炒洋蔥:
洋蔥 1/4個 (切絲)
紅辣椒 1個(切丁)
奶油 1/2大匙
E.V. 橄欖油 1/2大匙
海鹽 1/8小匙
黑胡椒粉 1/8小匙
醬汁:
奶油 1大匙
蒜 8顆 (蒜片和烤過的蒜泥)
高湯 1/2 杯
烤肉醬 1大匙
醬油 1/2 大匙
糖 1大匙
做法:
預熱烤箱 180C,把一半蒜和小番茄烤約15-20分鐘至烤軟,蒜壓泥備用。另一半蒜切片,烤好的蒜壓成泥狀。
用海鹽、孜然粉cumin, 黑胡椒粉、E.V. 橄欖油,把羊排醃約30分鐘。
在鍋中加入橄欖油、奶油,加入洋蔥絲炒軟,加入辣椒丁,用鹽、胡椒調味,裝起備用。
鍋中 ,取出羊排,用鋁泊紙蓋住保溫備用。
在鍋中加入1匙奶油、蒜片和蒜泥炒香,加入高湯、烤肉醬、醬油、糖拌煮約3分鐘。
把羊排放入醬汁中,兩面煮約30秒。
在盤中鋪上洋蔥絲、排上羊排,淋入剩餘的醬汁,用烤番茄裝飾。撒上巴西利。

Ingredients:
8 lamb rib chops
For marinade:
1/2 tsp sea salt
1/2 tsp cumin powder
1/2 tsp ground black pepper
1 tbsp E.V. olive oil
1 tbsp butter
1 tbsp E.V. olive oil
1 tbsp chopped parsley
6 cherry tomatoes
Caramelized onions:
1/4 onion (sliced)
1 red chili pepper (chopped)
1/2 tsp butter
1/2 tsp E.V. olive oil
1/8 tsp sea salt
1/8 tsp ground black pepper
Sauce:
1 tbsp butter
8 cloves of garlic
1/2 cup broth
1 tbsp BBQ sauce
1/2 tbsp soy sauce
1 tbsp sugar
Method:
Preheat the oven to 180C. Roasted half of the garlic and cherry tomatoes for about 20 minutes. Slice another half of garlic. Press the roasted garlic into garlic paste.
Marinade the lamb chop with sea salt, cumin powder, ground pepper, E.V. olive oil for 30 minutes.
Heat E.V. olive oil and butter in a pan over medium heat, fry the sliced onions until soften, add chili, salt and pepper and cook for one more minute, remove and set aside.
Heat 1 tbsp butter and E.V. olive oil in a pan, pan fry the lamb chop until golden brown and not to cook through, remove the lamb chop and set aside.
Heat 1 tbsp butter in a pan, add sliced garlic and garlic paste, stir fry until fragrant, pour in the broth, BBQ sauce, soy sauce and sugar and cook for about 3 minutes. Put the lamb chop back into the pan and cook for one more minute.
Place the caramelized onion on the plate, arrange the lamb chop on the onion and pour the sauce over the lamb.
