Today I made a Kabocha squash cake.
Kabocha squash is a very common ingredient in East Asia.
In Korea, it is used a lot, especially for baking, while Pumpkins are rarely used.
When I first came to the United States, it was interesting to note that in the United States, kabocha squash is not used for baking at all, and pumpkins are a very common ingredient in baking.
The two taste similar but slightly different.
Kabocha squash has a bit firmer texture and fresher taste.
If you've never tried kabocha squash in baking, give this cake a try! It's so so delicious.
▶Ingredients (for 1 pound cake mold- width*length*height 15.5*7.5*6.5cm)
[Kabocha pound cake]
- 90g unsalted butter
- 55g Light brown sugar
-12g Honey
- 50g Eggs
- 13g Kabocha powder
- 80g Cake flour
- 2.5g Baking powder
- A pinch of salt
- 70g Kabocha puree
- 50g Cubed kabocha
1) Lightly beat the room-temperature butter.
2) Add brown sugar, salt, and honey and whip until the butter color becomes bright and bulky.
3) Mix the room temperature eggs little by little over several times.
4) Add room-temperature squash puree and mix.
5) Add the sifted flour, baking powder, and Kabocha powder and fold until no powder is visible.
6) Add kabocha squash cube and mix.
7) Put the finished batter in the mold and arrange both sides high and the middle low with a spatula.
8) Bake in a preheated oven at 170 degrees Celcius (338℉)for 40 minutes. (Wiswell Enhanced Oven)
* Convection oven: Bake at about 160 degrees Celcius.
[Kabocha Cream]
- 60g Mascarpone cheese
- 25g Sweet condensed milk
- 100g Heavy cream
- 120g Kabocha squsah puree
1) Lightly loosen the mascarpone cheese.
2) Add condensed milk and mix well.
3) Add kabocha squash puree and mix well with a hand mixer.
4) Add cold heavy cream and whip until firm.
*Storage: In an airtight container so that it does not dry out the surface, you can keep it in the refrigerator for up to 4 days. It can also be frozen. (About 3 weeks when frozen)
