🍳Ingredients
📌Handmade Caramel
-Fresh Cream 130g (Warm temperature - 50~60 degrees)
-Water 20g
-Sugar 150g
-Starch syrup 40g
-Salt 1g
-Butter 25g
*If you take out caramel with a knife, it'll ruin the shape or it's not good for the knife
*I recommend putting paper foil on the cutting board and cutting caramel
📌How to make Handmade Caramel
1. Warm up the fresh cream and prepare it. (50~60 degrees)
-If it's too cold, when you mix it with syrup, there's too much bubble
2. Put water, sugar, starch syrup in a pot and boil it over medium to low heat until brown
3. Mix the fresh cream little by little.
4. Add salt and butter and turn off the heat when it reaches 120 degrees
5. If there's no mold, place the paper foil on the pan and pour caramel over it
6. Cool in the refrigerator for more than 2 hours, cut it with a knife, and wrap it in parchment paper
If the caramel melts when you cut it, refrigerate it for a while and cut it again
The syrup is very hot, so take your time and be careful
Use paper foil to harden and cut it
