Hi chef. How come with this one you use soy + salt + oyster sauce compared to your other ones which are soy + salt + chicken stock powder?. Does the oyster sauce tend to over power the fried rice and make it too dark?

Love this channel. If you want the taste and salt of the soy sauce without the liquid make a well in the center of the rice add the soy sauce. It will boil off quickly.

I lived in China for three years. They didn't make it like this at all. I didn't like it when I was there because the taste was very bland. I ate dumplings and fried rice noodles a lot and tomatos and eggs. Dumplings were my favorite:-)

Unfortunately the "peas and carrots" are over used In the Americanized style Chinese food. They're put into EVERYTHING because they're inexpensive, require no prep, colorful, and they hold up well. In all my travels in the orient I have never seen them used there.

Q2 3:37 Why 2 cups of uncooked rice? Q3 @ 3:20 When you added your eggs, Your fire was at a low burn, was it at a low fire all the while? Q4 @3:58 Why medium heat over non stick pan when the rice is added, is it, because the rice is cold, and the temperature is the mix now needs to be raised in order to dry up the ingredients in the pan? Q5 5:30 Why does the rice jumps indicate that the rice is cooked?

I usually do this with bulgur instead of rice - works really well also, plus got a bit more fiber :) agree with the people mentioning the dialect also, reminds me of my years living in Penang, thumbs up

As always, wonderful sharing by you guys. Just like to check with Roland on the part he say that the rice or stuff stick to the pan is because the pan is not hot enough. I remember that someone was sharing that for non stick pan, one cannot add oil into a hot pan as it will damage the pan. Care to share your view on this? Thanks

Hi Casey. Sorry for our late reply. We have heard that saying too but Roland has been heating the Shogun by La Gourmet pan up with no issue because it’s granite coated. I think it depends on the coating of the pan. If your non-stick has the traditional smooth coating, it’s best to add oil in when your pan is cold. Also avoid using olive oil in non-stick pan - regardless of what coating. This is because olive oil because it has low heating point. Same goes for butter. If you need to add butter, add some cooking oil with high cooking temperature to even out. Plus always use only medium or low heat to cook when using non-stick. Washing is also another step that can spoil the pan. Wait for the pan to cool down totally first and only use a non-abrasive sponge to wash. Hope this helps.

I just made this but didn't have shrimp. Followed recipe as best I could. Used 3 eggs. Came out wonderful. I added a little lemon juice at end with my green onion since I'm Greek. I also made mongolian pork to accompany. Thanks for the recipe!

Roland, I need your help please. A member of my family is allergic to shell fish and bi-valves. I don't use any fish sauce or oyster/lobster sauce. I use coconut animos, basalmic creme and mushroom sauce as substatutions but is there another product I should try? I have been looking into vegan sauces but the reviews are "blech" on most items. Any idea is welcome... and thanks for all the wonderful ideas for dinner :-)

Hi Lucy. Thank you so much for watching our video. Mushroom sauce or vegetarian oyster sauce can be used to replace regular oyster sauce. Light soy sauce can be used to replace fish sauce. Go for Chinese light soy sauce though cos Japanese light soy sauce can be a tad too sweet. I hope this helps.

These days i made my own imaginary combination, a combination of rice with mustard bio seeds. With an added of salt, pepper and coriander, grinded. Sunflower oil! Now everyone can do as they please. Important are mustard seeds. I added the seeds when the rice is boiled in half. And like a dessert is good a red apple sliced with slices of garlic! Eaten together . The taste is formidable!

Can i omit the shrimp & just use char siew only? Do i still need to include the garlic & shallots fried in sesame oil? So when frying the fried rice i still add in ingredients B) but no shrimp? Btw can i substitute char siew for roast duck? I happen to have leftover roast duck in the fridge & this recipe seems perfect. Btw, 2 cups is 2 normal measuring cups or rice cookee cups? Hi Lilian. Yes you can omit shrimp and use ingredients of your choice. Yes garlic and shallots fried in sesame oil will make this dish very yummy. Please add them to your dish . We used rice measuring cup to measure 2 cups. Happy cooking!

I used japanese rice as i really ❤ the texture of it after eating Din Tai Fung's Egg fried rice. This is one of the best fried rice I have cooked, the Roast duck added so much Smokiness & Flavour to the Dish. My family of 3 each had almost 2 bowls of the Fried Rice. Thanks a lot! Btw, ure Garlic Fried Rice is really good too, I tried cooking it sometime back & I can recall how much my nieces and nephews ❤ it.

For a start you never cook with sesame oil, it is an add in later with a very low boiling temperature and Chinese food is cooked at very high temperatures, also you need some moisture in the food and yours looks extremely dry, Chinese is one of my favorites and am complimented on my special fried rice, sorry but this is not a method I will be trying.

I don't understand, you look to be a good chef, but as far as I know Chinese chefs use sesame oil only at the end of the dish but never to cook with it, first because the taste is very strong and second because it doesn't stand the heat well.

I like your videos but when you start talking about grams when measuring instead of 1 cup 1 oz 1 teaspoon 1 tablespoon it seems like you're training Cooks then the video becomes very confusing and frustrating having to look up what that measurement is. I see no problem with using that cooking language but that would be great of your training chefs or Cooks. But when you're speaking to the regular public that doesn't quite know about those things it becomes very frustrating as a viewer. I know I can look up the recipe afterwards but I like to write them down just as you're cooking without having to do so.

Hi Albert. So sorry for the confusion. We have actually listed the ingredients used in the description box of this video. You can take a screenshot or copy from there and amend at your own pace. The teaspoon and tablespoon we used is the usual metal ones used normally. Everyone should have them at home. As for weight, we would recommend all homecooks to buy a weighing scale at home. As for cups, the one we’re using is UK measurement. Our 1 cup is 250ml. Hope this will be helpful for you. Happy cooking! 🙏🙏

Thanks for sharing. With regards to food sticking on the wok, according to some other food channel, the recommendation is to NOT heat the wok before adding the oil. In other words, the wok and the oil must be in room temperature if we are using a stainless wok. I'm assuming a nonstick wok is okay. But you are stating the reverse for both the stainless and nonstick woks. I'm confused.

Hi camotetea. Unfortunately this brand is only available in Southeast Asia now. We have given our feedback to the manufacturer. Hopefully they can start selling on amazon soon.
