Pineapple Upside Down Cake
This is a really easy recipe for pineapple Upside down Cake.
We used a boxed yellow cake mix and substituted pineapple juice for the water.
Our video makes individual servings, but this recipe will also make a 9 inch round or square cake pan.

We made bourbon soaked maraschino cherries with brown sugar. The bourbon is optional, but adds a nice flavor to the cakes.
Recipe:
Ingredients:
1 each- Fresh pineapple
1 each- 16 ox box yellow cake mix
3 each- Whole eggs
1/2 cup- vegetable oil
1 cup- pineapple juice
12 each- maraschino cherries (use the best you can find without artificial coloring)
1/4 cup- brown sugar
2 oz- bourbon (optional)
your favorite caramel topping
Method:
In a small bowl combine the maraschino cherries, brown sugar and bourbon. Refrigerate for one hour.
Add the cake mix to a large mixing bowl.
Add eggs, vegetable oil and pineapple juice.
Mix with a hand blender until smooth.
Peel the pineapple and slice into 6-8 pieces.
Using a ring mold, cut out the core from each piece.
Coat your pan with pan oil spray.
Drizzle the bourbon and brown sugar mixture into the bottom of each pan.
Place the sliced pineapple into the pan.
Set 2 cherries in the center of each pineapple.
Pour cake batter into each pan. The cakes will rise, so fill to one half inch from the top.
Bake at 375f for about 25-30 minutes.
Use a toothpick to check for doneness. If the toothpick comes out clean, they are done.
Remove the cakes and let cool for 15 minutes.
Invert the pan and let cool for 15 minutes.
Remove the pan and the cakes should come out cleanly. You may have to tap the tops of the pan to release the cakes.
We like our cakes with salted caramel and vanilla bean ice cream. Your favorite toppings are obviously your choice.
