Whenever I leave home for a long period of time, this is always a dish I look forward to when I return. It's a super old school porridge recipe. It takes only 5 ingredients (including rice, dried scallops, dried oyster, chicken and spring onions and requires no complex skills.

Oyster Porridge brings you the taste of the sea into the cosy and familiar environment of home. Dried oysters and scallops are the best combination to add for stock when making porridge. The seafood-y umami flavour they bring about is so heart warming, you will never forget it's taste. For this dish, you will need:
45g dried scallop
70g dried oyster
1 cup rice (wash and add 1 tbsp oil and 1 tsp salt to make silken texture)
200g chicken
Spring onions for garnish
(seasoning chicken)
1 tbsp soy sauce
1 tsp corn starch
1 tsp Chinese cooking wine
1 tsp sesame oil
Dash of ground white pepper
(Seasoning Porridge)
2 tsp salt (adjust to personal taste)
Dash of ground white pepper (adjust to personal taste)
2 tsp soy sauce (adjust to personal taste)

Instructions:
1. Soak dried goods 2-3 hours in advance
2. Add salt and oil to washed rice 2-3 hours in advance
3. Cut up remaining ingredients.
4. Add water to rice and bring to boil.
5. Add dried goods and simmer for 20 minutes. Add soaking liquids as well.
During the simmer, occasionally stir and scrap the base, preventing any rice or oysters from sticking to the base of the pot and charring. During the simmer, remove the scum that forms on the surface of the porridge as well.
6. When the water reaches same level as the rice, add more water to below the initial level. Carry on boiling, but this time, stir and scrap the base more often as the rice has started to release the starch and is more prone to sticking to the bottom of the pot.
7. When the water level reaches about the same as the rice, you will start seeing holes forming due to air pockets rising from the bottom of the pot. Add the chicken at this point, then add the seasoning to reach desired taste and preference.
8. Stir in the seasoning and serve once the chicken is cooked (about 3-5 minutes).
9. Serve with garnish. For crunch add fried anchovies or silverfish. Add breadstick if you're having this for breakfast (or feeling hungry).
