I love this dish in Thailand where they had calamari and i like to eat it with chilli in fish sauce ( prik nam pla )

That looks delicious! I'm sure that XO sauce lifts this already pricey dish to an even higher level (scallops certainly aren't cheap in the UK), but oh heavens a good quality brand of XO sauce is way beyond my budget. I'm presuming that cheap brands will do nothing for the dish, so are not worth buying.

Look at ingredients list on each brand the £12 lee kum kee looks sane as the £4 lin lin. Its like the £8 lion & globe peanut oil us same as £2.50 waitrose peanut oil.

Your oil spout is terrible... just get a squirt bottle vs getting oil all over the induction top.
