Swamped Cow (Vaca Atolada) is one of the most typical dishes of rural cuisine in various regions of Brazil. Beef ribs and manioc or cassava are the main ingredients.
According to some versions, the name comes from the fact that the tropeiros, drivers of herds of cattle, at certain times of the trip, due to the rains, were forced to stop, as the blocked terrain made it impossible for the animals to move, that is, the cattle were bogged down.
And men took advantage of this break to feed themselves with this dish, simple to make and very nutritious. And from there would have come the name Swamped Cow.
This video was taken in a picket (a sort of shed) at the Acampamento Farroupilha event, which takes place in Porto Alegre, southern Brazil, and honors local traditions.
