Recipe:
1. Rinse the pork ribs in water three times. This recipe is suitable for 1.5 - 2 kg ribs amount.
2. Slice the ribs to finger length.
3. Put ribs into a deep pot and add enough water to cover all ribs.
4. Add 2 pieces of green onion, 1 bottle cap of cooking wine and 2 star anise.
5. Heat it until water boils and remove the blood foam.
6. Add 1/3 tbsp salt.
7. Put on the lid and cook for 40 minutes.
8. Get ribs out and dry them with kitchen paper.
9. Heat up the pot and add 15ml oil. Fry the ribs until it all turns slightly brown.
10. Add ribs soup and make sure it covers ribs.
11. Add 4 tbsp sugar, 3 tbsp light soya sauce, 1 tbsp dark soya sauce, 3 tbsp Chinese black vinegar. Then cook it with lid for another 5 minutes.
12. Mix 1 1/2 tbsp Chinese black vinegar, 1 tbsp starch and 3 tbsp water to make the sauce.
13. Remove the lid. Cook it until most water evaporates. Then add the sauce.
14. Keep cooking until all ribs covered by sauce.
15. Sprinkle sesame seeds (optional)

1 tbsp dark soya sauce

1 1/2 tbsp Chinese black vinegar
1 tbsp starch
3 tbsp water
