Kali ni saya ingin berkongsi satu lagi resepi tart nenas yang sedap dan cair di mulut tanpa menggunakan telur. Tart nenas ini bukan hanya sesuai disediakan sewaktu menyambut perayaan, ianya juga sesuai dijadikan kudapan dan door gift. Jem nenas homemade untuk video ini ialah resepi ibu saya tanpa menggunakan kulit kayu manis, jadi tiada rasa rempah pada jem nenas ini.
Resepi ini menghasilkan anggaran 69 keping tart nenas.

DOH TART:
1 cawan & 1 1/2 sudu besar mentega bergaram (lembutkan) | 250 gram (1 buku mentega)
1 sudu besar gula aising/gula pasir dikisar halus | 7 gram
3 sudu besar susu pekat manis | 60 gram
1/2 sudu besar esen vanila
1 sudu besar krim putar tenusu | 14 gram (boleh ganti dengan susu segar)
1/4 cawan tepung jagung | 30 gram
2 & 2/3 cawan tepung gandum | 335 gram
rehatkan doh selepas diadun dalam peti sejuk selama 1 hingga 2 jam sehingga doh tidak terlalu lembik untuk dicanai dan diterap.
JEM NENAS:
2 biji nenas moris muda
Anggaran 400 ml air (untuk blend nenas) * abaikan jika pakai food processor
Jus dari 1 biji limau nipis
1 & 1/2 cawan gula pasir (sesuaikan ikut kemanisan yang dikehendaki)
1/4 sudu teh garam
SUHU MEMBAKAR: 170℃ | 338℉ SELAMA 20 HINGGA 25 MINIT (ATAU SEHINGGA BAHAGIAN BAWAH TART KECOKLATAN), GUNAKAN API ATAS BAWAH DAN BAKAR PADA RAK KEDUA DARI BAWAH. PANASKAN KETUHAR SELAMA 10 MINIT SEBELUM MULA MEMBAKAR.

Delicious, buttery and melt-in-your-mouth pineapple tarts without egg. These tarts are not only demanded during festive seasons, they're also perfect to satiate your sweet cravings and as door gifts. I share my favorite version of homemade pineapple jam which I learnt from my mum, without the addition of cinnamon. So the jam is tangy without the presence of spices aroma. This recipe makes approximately 69 pieces of tarts.

TART DOUGH:
1 cup & 1 1/2 tbsp of salted butter (softened) | 250 grams (1 cube)
1 tbsp of powdered sugar / finely ground granulated sugar | 7 grams
3 tbsp of sweetened condensed milk | 60 grams
1/2 tsp of vanilla essence
1 tbsp of dairy whipping cream | 14 grams * can use fresh milk to substitute
1/4 cup of corn flour | 30 grams
2 & 2/3 cups of all purpose flour | 335 grams
*chill the dough for 1 to 2 hours until it is firm enough to ease rolling and shaping processes.
PINEAPPLE JAM:
2 unripe Morris pineapples
Approximately 400 ml of water (to blend) * omit this if you're using a food processor
juice from 1 lime
1 & 1/2 cups of granulated sugar (adjust according to your desired sweetness)
1/4 tsp of salt
BAKING TEMPERATURE: 170℃ | 338℉ FOR 20 TO 25 MINUTES (OR UNTIL THE BOTTOM PARTS ARE BROWNISH). USE TOP AND BOTTOM HEAT AND BAKE AT SECOND FROM BELOW RACK. PREHEAT OVEN FOR 10 MINUTES BEFORE BAKING.
