Pocas tartas tan sumamente sencillas, pueden superar a la que hoy os traigo. La famosa Tarta de Santiago, elaborada con almendras y aromatizada con limón y canela.
A pesar de que apenas existen almendros en Galicia, su consumo y comercio puede atestiguarse desde la Baja Edad Media. Era importada por vía marítima desde las tierras del Levante español. En Galicia, su condición de ingrediente refinado se mantiene incluso hoy en día.
La tarta de Santiago hunde sus raíces en las tradiciones más antiguas de la alta repostería gallega.
Entre las múltiples especialidades atestiguadas históricamente, la más difundida en la actualidad es, junto con los almendrados, el bizcocho o tarta de almendra.
Entre ellas, la Tarta de Santiago.
El precedente más inmediato de este dulce podría encontrarse en la torta real consumida en las colaciones de grados de la Universidad de Santiago ya en el siglo XVI (1577), aunque se carecen de datos fiables para confirmar el vínculo con la tarta de Santiago. Este postre, de intensa tradición histórica en Galicia, adquiere su forma definitiva en 1924, cuando José Mora Soto -fundador de la compostelana Casa Mora- decidió adornar sus tartas de almendra con una silueta de cruz de Santiago, uniendo en este gesto un símbolo de la ciudad y una especialidad tradicional.
