I’ll never turn down Ladurée, but I’m definitely more of a Pierre Hermé gal. His are a softer texture, and his flavors are more creative. However, Ladurée tends to have the best classic or single flavors...my favorites are lemon, rose, and fleur d’oranger.

Honestly I got a box of theirs from my NY trip. They weren’t the best. I believe homemade are better. Or maybe they put out preservatives in theirs as it’s shipped form France which naturally kills the taste. I tried Whole Foods, local bakery (mostly Italian style), and only found one legit french bakery that actually make the most perfect macarons with the French style. They were better than Laduree

I agree I believe the shipping does kill some of the taste. Makes them a bit more bland than a small batch bakery.

@@baketoujours Hi , i am kind of surprise that they would ship a product like this directly from France to all the shops in the US or world wide then. that mean 2 things 1) the product is probably much less fresh 2) they probably produced it in a less artisanal way... for that price, i agree with PajL better do it yourself or buy good local with no famous name like a local patisserie in alsace ;)

They use bouijur purée and it was marshmallow filling in first one. Get Pierre herme macaron book you will find a new world of taste

Duverger and Woops are probably my favorites! I definitely can’t duplicate that texture Laduree has. I wouldn’t be surprised if they used the Italian method, which has a much crispier textured.

Great you tasted bakeries from Alsace. Laduree Macarons are amazing - the flavors that I tasted and like are lemon, passionfruit, and chocolate. I liked the crunch of their macaron shells which are crunchy on the outside and chewy on the inside. The other commercial brands in the States sacrificed a lot on texture and the balance of taste from the shells and their fillings. If you went to Paris, France for a vacation which may be a long time after we get a vaccine from this pandemic. Ask for a box of Pierre Herme macarons - they have great flavors. For packaging, a thick cardboard macaron box is the best choice, you just need some colored tissue paper you get from Daiso. Then print some stickers of your branding logo. Nevertheless, a French macaron is almost like a culinary sacrilege in the pastry world. I loved those petit fours - probably my fave for eating and baking. I baked several flavors from Pierre Herme's Macarons and their flavors are divine. If you don't like a white chocolate ganache - I recommend a white chocolate that doesn't have a lot of sugar content like Felchin Swiss White Ivory (white chocolate courverture that has less than 25% sugar). Another alternative is Guittard Creme Francais 31%, Callebaut W2 28% White Chocolate which taste like light caramel notes. For sweet fillings, I prefer either a white chocolate ganache mixed with praline paste, Italian buttercream, dark chocolate ganache, or fresh fruit confitures with some fresh herbs and spices. These make great balance between the shells and the fillings itself. Good luck on your online business for french pastries.

@@joanofarc33 Bouchon macarons are on yhe crispier side and their fillings are either made of ganache, or jam. Laduree feature classic flavors. I had the choco raspberry, passionfruit, lemon, vanilla, mint chocolate chip. Their macarons are chewy inside and slight crisp. Flavors are excellent. Pierre Herme' flavors are more creative but delicious.

Hahaha I'm dyyyying...I did the exact thing when I went to the flagship Laduree on the Champs Elysees in Paris. While the store, the presentation, and packaging are absolutely gorgeous, the overall macarons truly fell short of my own homemade macarons as well. I am not a fan of crunchy macarons at all and prefer an eggshell exterior with a bit of chew. Much to my surprise, I learned that most Laduree macarons are made at a large facility, frozen, and shipped to their stores. To me, that makes the texture and taste a bit stale. But happy you got to experience them!!

I agree! Their style and presentation is amazing but I felt that the macarons themselves were a bit stale (after tasting both in Paris and NYC). Since I'm a home baker too, I can afford to really pack the flavor into my fillings which would be cost prohibitive for bakeries and I can use more of the the filling in each mac. I really wanted to be wowed but just wasn't. It's "team chewy" for me too!

I agree TONS of big brands bake in huge batches and freeze and ship. It most definitely changes the texture and just isn’t the same.

To me, the quality of the fillings is what sets these patisseries apart. Fillings are smoother and pack a punch even when they seem lacking. On the shells however, I must say I prefer the homemade version lol. I find Laudree’s especially to be sweeter (also their cookbook recipe is heavy on the powdered sugar) and your recipe is more pronounced on almond flavor.

caron gomes people have different preferences, but what I’ve been taught is that they are suppose to have an nice crunch to the shell of the macaron but have a softer and almost chewy center. It’s hard to say why they are crunchy as I don’t know their recipe, but I have talked with people that enjoyed their macs a lot from laduree and they were so crisp. Could just be my batch. 🤷🏻♀️

Vanessa Autumn Pierre Herme has great recipes for fruit filling. He does fruit jam that is frozen 4 mm depth and cut 1.5 square to place on the Mac before piping cream, meringue etc. His recipes are online.

I feel about "Macarons" the same way when "Pasta" became the rage. Or Demi Tassels, All I hear now is Macaron, Macaron.... Europe offers so much in desserts some will make want just move next door and blissfully die of coronary or diabetes complicated illnesses. Macarons are egg whites and sugar . How about patisserie choux made with Gran Mariner , or Champagne ?? Crème making is a true art.

I noticed some can be crispy as they come right out of the fridge. Were these refrigerated? I like a slight crunch but with a softness. Would be interested to try passion fruit that sounds great.

Where is this store located? Nice patio. Visited the SoHo store. Sadly understaffed, overpriced treats and a bit overhyped. I thought the macaroons melted in your mouth. But in Paris, our guide suggested Pierre Herme. They have more interesting varieties.

I actually really like the Woops macarons! Lavendar Honey was my favorite. But what I really loved was the outer shell crunch. I can't seem to get my texture the same 😞 the crispy airy crunch that I can hear when you bite into these. How in the world do I get that?!?!

I’ve tried Laduree and Fauchon macarons in Paris and the Fauchon ones were the more chewy type without that crunch. Still a slight firmness and will definitely not crack or crunch.
