Marinating Chicken Breasts
4 Large chicken breasts
4 tablespoons olive oil
1 tablespoon crushed garlic
1 tablespoon ginger
1 tablespoon garam masala
1 tablespoon turmeric
1 teaspoon salt
1 teaspoon cumin
The Stew
¼ - ½ cup avocado oil
½ white onion
10 cloves garlic
4 habanero peppers
15 ounces tomato sauce
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon garam masala
1 teaspoon salt
I cup chicken stock
8 sprigs cilantro
4 sprigs scallions (Just the green part)
Wash the chicken breasts and trim off any excess fats, cut into smaller pieces, and place in a large bowl.Add the following to the chicken:- Olive oil, ginger, garlic, salt turmeric, cumin and garam masala and give it a good mix. Cover with cling film and marinate it overnight in the refrigerator. Ensure to remove from the refrigerator 90 minutes prior to cooking. Place a pot on the stove, add some avocado oil and saute the chicken on both sides until golden brown, then set aside. Add more oil to the same pot, saute the onions. Ensure to scrape the fond, this add to the flavor for this dish. Next add garlic, cook it for two minutes before adding the habanero peppers. Add tomato sauce, cumin, turmeric, garam masala then salt, give it a good mix then add chicken broth. Add chicken into this mixture, lower the heat and allow to cook for about 20 minutes while covered. Ensure to stir as needed to prevent sticking. Finally, garnish with cilantro and scallions and turn off the heat.
