TASTY fried pork belly with salted fish recipe Aunty Mary Cooks. Pork belly deep fried cooked with salted fish is very tasty. Aunty Mary shows how to cook this easy recipe pork belly with salted fish at home. It goes well with plain rice and even beer. This is a popular Asian dish.
Ingredients
1kg pork belly, slice thinly
120g salted fish, soak 30 mins, curt into small chunks
1&1/2 Tbsp dried chilli flakes
1 big knob ginger, slice thinly
1 bulb garlic, peel and chop
1 bunch spring onions, cut into sections
Seasoning Sauce
2&1/2 Tbsp sugar
2 Tbsp soya sauce
1 Tbsp dark soya sauce
1 Tbsp oyster sauce
3 Tbsp Shaoxing wine, Chinese cooking wine
1/2 C water
Note:
1. Fry the pork belly until the texture you prefer. I like it quite tough for this dish with a good bite. But need strong teeth...haha. You can remove it midway if you like it softer.
2. You can adjust the spiciness of this dish. The amount of dried chilli flakes is just perfect for my family. It’s quite mild but gives it a kick.
3. You can use any type of salted fish. Choose one with good flavour. The ones made with mackerel is very good but I can’t get it here.
4. I like to fry the ginger until golden brown. It’s nice to chew and eat it.
