Living in Texas, I worked for a company who’s headquarters was in Seattle. I went to the home office for the first time and everyone there was excited to take me to the “world class BBQ restaurant” that is famous for local awards… every day for lunch. They were pretty insulated when I got the three meat plate and after tasting the brisket, the pulled pork, and smoked turkey, I threw it all in the trash and went up to ask if they had something basic, like a burger. They did not. I ate the mediocre banana pudding after scraping five gallons of whipped cream. I had to stop for a McDonalds burger and fries on the way back to the office. The next day they tried to impress me with a steak at Sizzlers. I thought they went out of business in the ‘80. Don’t eat in Seattle.

Son, if you're a Texan, I probably won't question your bbq, but you know nothing of the food in Seattle. There is no "Seattle" food because most of Seattle is made up of people who settled here from all over the Pacific Ocean; in a 5 block area you can get Szechwan, Cantonese, Vietnamese, Korean, Thai and other ethnic foods and all of them will be made by people from those countries/areas, who are making affordable food they are damn proud of. We have amazing seafood, so there are all sorts of cuisines that take advantage of that. I am fairly certain there are places in Texas where I would be served garbage bbq, or garbage seafood, some areas are just more suited to different types of food than others.
@josh8494

@@Chpow01 strike a nerve, did I? Didn’t mean to insult your crappy food, son. A) I’m not a Texan, I live in Texas. I hail from the east, the actual south. Where we bbq pigs over sweet wood, not cows over trash wood because it is the only thing growing on the plains. However, for what they do make here, it is done quite well. B) I am not your son, sport. I’ve been around long enough to have had two careers already and because I can, I’m going back to college to start working with non-profits as a twilight tour. In this time I have spent more than 30 years traveling the nation and the globe. I’ve worked in over 60 different countries, many I’ve traveled to different regions. I’m quite familiar with regional and international flavors. I’m well aware of the variety of food in Seattle, and some is done well. BBQ is not one of them, in fact, I have not found the best restaurant of any genre in Seattle. Seafood may be the best thing going up there, but I’m not calling it better than Cajun seafood. C) When the locals, born and bred in the place try to impress you by taking you to a great steakhouse and you end up at Sizzler… someone needs to step up their food game. In short, when you’ve lived much of your life in places (the south) where actual good bbq can be grabbed and gas stations or corner stores (no, not talking about Buc-ee’s, sorry actual Texans) in every little town you drive through, it’s hard to smile nicely at folks like you who scream about “the best bbq/food anywhere is here!”, with a straight face. Best we can do is tell you, “Bless your heart.”, and hope you know what we actually mean. Things like that just start sounding the nice lady at the hotel in Salt Lake City trying to bet my associate and me that they had a restaurant that had the best and most authentic Mexican food we have ever had. We needed to try it and she would take us at our word if we said it wasn’t. We even worked her that we work in Mexico regularly. How much more authentic does she think we will find it? None of the four of us who went to the able Iguana that evening were willing to finish our meals. It was awful. When people like you get offended because your bubbles get burst that your food is not as good as you believe, well, bless your heart, kiddo.

I had to look it up after reading your reply. Yeah the criteria Chef's Pencil used was highly flawed. They only looked at the top 75 cities in America. After averaging all the rating that met their mere 5 ratings, they decided that the cities with the highest average must be the best. Trip Advisor was so discusted with the list, they made a proper one with actual businesses listed and linked it in a tweet thread in response to this injustice.

I am from Massachusetts. Several years ago, I moved to Texas. One of the first things I did was visit Louie Mueller Barbecue in Taylor. I could tell immediately that this place was, quite literally, steeped in history. The decades of smoke had turned many of the hundreds of business cards along the wall a deep, rich shade of brown. Many of the business cards belonged to men long since passed away. Others were placed by young men, now old and gray. Some were still fresh. My brother and I got some brisket. I took my first bite of the brisket, and savored it. I sat there for several minutes. I then leaned over to my brother and said "I understand why people here are more religious." I live in the Seattle area. Was born and raised in Texas, so I would like to think that I can recognize barbecue when I see it. Had just moved up here and one of my new neighbors invited me and my family over. He said he was going to barbecue to welcome us to the neighborhood. Wife and I got the kids dressed and told them to be nice and all. We got to their house, and apparently their idea of barbecue is hot dogs and store-bought pre-formed hamburger patties so thin that you can see through the dang things! We were very polite, sat and everyone had one dog and one burger, while they all (they all being all our new neighbors) went on and on with their extremely liberal conversations. Wife and I rounded up the kids and left as soon as we politely do so. We moved about three months later to a more rural community, where they at least try to make something resembling a brisket!

Now in Eastern Washington, which is like our mini version of the South, we do have great BBQ. Porters in Pasco, WA is amazing and might deserve to be on the list. But that is only because the owners are transplants from South Carolina who wanted to bring the food and taste of the Deep South to Eastern Washington. The best BBQ joints I've been to all had most of these things in common: 1. They're all southern. 2. They ain't in big cities (most are in the middle of nowhere.) 3. They get their meat for local/nearby farms 4. No one has ever heard of them, but have been around for over 50+ years. (only locals know of it.) 5. They've used the same pit for over 50+ years (so it's well seasoned.) 6. If you ask for a lite or small portion they'll say "well bless your little heart". 7. Their menu hasn't changed much in over 50+ years. 8. You can also get your fuel, live bait & Tackle, and/or hunting gear when your finished eating. 9. You can buy Sweet Tea by the gallon (or fresh squeezed lemonade for the kids.) 10. You'll get laughed (or thrown) out of the joint if you ask if they have a Vegan alternative anything (some will do it just for asking for salad.)

I once went through a time/space portal outside of Weed, California. There was an old trailer with a bunch of elderly black guys sitting around a 'que pit, conversing with deep South accents. The place also sold bait. Sweet tea and excellent sweet potato pie, and some of the best barbecue I've had. Middle of total nowhere. I think it may have been like Brigadoon or something, a portal into somewhere in the deep South, that might not be there if you look for it again. It was heavenly.

I grew up in Maine. We do lobsters and seafood. Everything I learned about BBQ I learned by travelling to the south, except for this one place that we used to have up here that was run by a guy who moved up here from Texas.

I'm Canadian, and I know if I go to Texas, i can get BBQ that will Blow my socks off; Even up here in the white Tundra, i've heard of Franklin bbq. I've also heard tale of the Carolina style bbq. Seattle is a Fish State. Newark is Pizza. Ohio is corn. Wisconsin is Cheese. These are the facts i know.

I think the problem is places that are really known for barbecue people tend to be tribal about where they get their barbecue. "My place is the best and the other places in town are trash." that skews the ratings.

@@ratholin As a Memphis native I can say we love our favorite local spots, but we would argue Memphis in general is in the top 3 BBQ towns if not number 1. We would defend Texas being ignored on this map as well. They are the best at beef BBQ vs TN pork.

I'm from New Orleans. I agree 100%. What idiot thought we have good BBQ? I don't know ANY local who thinks our best cuisine is remotely BBQ. Like you, we rock the critters & anything we find in the swamp. I just started a Roux seeing this video.

New Orleans is one of the best place in the country for food but BBQ is not one of those foods. Now BBQ shrimp from Pascale Manales is one unbelievably good dish, but frankly the only thing BBQ about it is the name.
