Mirza Ghasemi is an Iranian starter or main course prepared from tandoori eggplant or grilled eggplant. This dish is one of the most authentic dishes from the northern region of Iran and the Caspian Sea (especially Gilan province). Mirza Ghasemi is known in Western countries as Iranian eggplant dip.
This dish consists of eggplant with garlic, tomatoes, oil or butter, salt and pepper, supplemented with eggs. It is usually prepared in a pan and is usually served with bread or rice. The type made with zucchini instead of eggplant is called Kadu Ghasemi.
This dish was probably invented by Mohammad Ghasim Khan, the governor of Rasht during the time of Naser al-Din Shah (1896-1848), and was created by him and named after him. He popularized this dish under the name Mirza Ghasemi throughout Gilan and after being elected governor of Fars, he popularized it in this province as well.
Ingredients:
5 eggplants
5 tomatoes
7 cloves of garlic
4 eggs
2 tablespoons tomato paste
Salt, black pepper and turmeric
1/4 cup walnuts
