Today’s recipe is my #loadedpotatocasserole. It’s cheesy, bacony, and the crowd always goes wild for it. Cause come on? How can you go wrong with cheese and bacon.
Here are the three kinds of cheese to take your #mashedpotato casserole to the next level!
1 - Cream cheese! Cream cheese keeps your potatoes moist, even come the next day. So this a spectacular recipe for making ahead come the holidays!
2 - Havarti! This is Havarti cheese and it’s a soft, mild, incredibly delicious melting cheese. This is what is going to make your potatoes extra creamy and decadent.
3 - Cheddar! The third cheese is good, old-fashioned Cheddar. Cheddar is also a great melting cheese, but this one adds a lot of flavor to the potatoes as well. As you probably know the two are a classic and beloved combination, and we’re going to save some to add a nice pop of color to the top of the casserole.
INGREDIENTS:
8 slices cold, thick-cut bacon cubed
3 pounds Russet potatoes rinsed, peeled, and cut into 1" cubes
8 ounces cream cheese room temperature
1/2 cup whole milk room temperature
1/2 cup unsalted butter room temperature
2 teaspoons Kosher salt
1 teaspoon black pepper
1 cup freshly grated Havarti cheese
1 3/4 cup freshly grated Cheddar Cheese separated
4 green onions, chopped white and light green parts only
HOW TO MAKE IT:
1. Peel, cut, and boil the potatoes until fork-tender.
2. While the potatoes are cooking, go ahead and cook your bacon as well. Dice up some thick-cut bacon and throw it into a skillet over medium-high heat, stirring occasionally until it’s nice and crispy.
3. Next, drain the potatoes, and we’re going to make the potato base.
4. Add the cream cheese, the milk, the butter, and the seasoning and give it a good mix.
5. Going into the base of the potatoes, you’ll add all of the Havarti, about a half cup of Cheddar, and you'll also want to add about half of the bacon and some sliced green onions.
7. Mix it all up and we’ll pop it into an 8x8” baking dish.
8. Bake for 20 minutes. Then, remove it from the oven, add the last of the cheese, the bacon, and the green onion and bake for about 10 minutes more!
NOTE: The green onions are optional, but they do add a nice bit of flavor and freshness to the dish!
This is an excellent #potluck #holidaycasserole perfect for serving at #Thanksgiving or even Christmas!
