I made this ramen and was transformed by it. Insanely delicious and packed with nutrition. The mushroom chop is magical. Thank you for sharing your art with us Gaz! Notes: Due to time constraints, I used a commercial chili garlic black bean sauce and I did add fried tofu along with the veggies at the end.

For making broths I always keep the scraps and skins, all the cut-offs of root vegetables, onions, garlic, tomatoes in the freezer and just use them for making stocks - so you literally use your waste for good! 🥕 Also I found that boiling the veggies sometimes extracts bitter notes, so usually I’ll just let them steep and simmer.

This might be an unpopular opinion but if you need to dip your toes in rather than go cold turkey straight away then don't feel discouraged. One animal based meal less is a positive and making changes gently that result in a person sticking to being a vegan for life is better than someone transitioning straight away but it not lasting

Another good option / substitute for coconut milk is to use a bit of peanut butter, especially if its the kind you've got to mix yourself. Absolutely divine, creamy, peanut-y flavor. Some crunchy peanuts on top is excellent as well!

Ok, I made this the other day, including the chilli oil. My god... I never thought that the BEST chilli oil recipe that I have ever made, would have come from a Welsh guy... Bloody fantastic!!! OMG! This is the way to cook - and it's infinitely adaptable! Gaz, you were the original guy who convinced me that veganism was something I could definitely go for. I'd wanted to for a long time but felt a bit overwhelmed by all the changes I would need to make to my diet. Over time, you convinced me that not only was it the right thing to do ethically for a gazillion reasons, but also that I could be eating the most amazing food (and so it has turned out - I eat way better than I ever used to! Oh. My. Word. The. TASTES!). Thank you for that. And this is yet another one of your creations that I know I will be willing to make, despite it being a bit of a production to get it all done properly - because it's going to taste so good. And this recipe could be infinitely adaptable, too. I know you will be loyal to your dad's recipe for chilli oil, but may I suggest you also check out Wil Yeung's chilli oil? It's on Yeung Man Cooking, his YT channel. I think that might be worth your time in taking a look and considering it. Congratulations on the restaurant - I wish you great success with it. It's a difficult business to be successful in over a period of time, and now is a strange time, post-Covid - but if anyone can do it, I'm sure you will find a way of making it work. :-D So pleased for you!

I’ve been at home recovering from a major surgery this past week and my sister in law was taking care of me and she and my roommate worked together to make this recipe for me. This might sound hyperbolic but this was seriously maybe the most delicious thing I’ve ever eaten! Like maybe that’s because I had been eating hospital food for the week prior so everything else is just so enhanced, haha. But seriously, it was almost overwhelmingly bursting with delicious flavors. Amazing stuff! I’m so happy someone made this for me because this one is a little too involved for me to probably ever have tried cooking for just myself. Just mind blowingly delicious ramen!

I took the chance and made this for the first time for a dinner party of 6. I know, super ballsy of me, didn't even have a backup. Didn't have the outdoor fire and flame so used my Instant Pot instead (reduced cooking time by a few hours), and it was phenomenal. The stock was creamy from the coconut milk and had a very nice tang from the tomatoes. I followed the recipe to a tee and felt that there was not enough liquid for 6 bowls, esp when the stock was cooked down. Maybe enough for 4-5 medium sized bowls. The mushroom mince was on another level, I will def be incorporating the mince into other recipes!! Thanks Gaz, I love ALL OF YOUR RECIPES!!

I actually bought the Dalstrong knife 2-3 years ago because of your videos using your affiliate link on Amazon. After we met at your event in Berlin in 2019, you signed your book for me. I bought Chefs knife 8 and got many compliments on how well it cuts. My favorite knife. I don’t even use any other knives. And I even take it with me sometimes to places when I need to cut stuff :)

Uncle Roger would probably criticize that this is really not a authentic Japanese ramen. No Tare, ramen noodles go straight out of the water into the soup and so on. But I don’t care. I’m sure it tastes very nice 😘
