I don't know if you read these but peeling onions and shallots is much easier if you roll them like a lemon or lime. loosens the skin.

I'm not a big tomato person, but I had a can of tomatos and green peppers in the pantry and used them. Along with a few other things (mild cheddar, breakfast sausage, onion powder, garlic powder.. ) turned out awesome.

Love your recipes! I make them as you do, but also use them as inspiration to put my own spin on them. This biscuit casserole concept is going to go together in an Italian peppers and eggs version with crumbled Italian sausage (plus the pesto, the pesto is brilliant).

Just made this. It was delicious! Though you should probably type up the final recipe, as I had to note it down myself as I watched the video (had to count the eggs) and there were some inconsistencies that threw me off. You said a cup of milk to be mixed with the eggs, but it looks like you only use half that. Also first you say 25-35 min in the oven, but when you take it out later in the video you briefly mention (easy to miss) that it was in for 40 min. I had to cook mine for closer to a full 50 min after attempting to serve it only to dig in and find still-liquid eggs. I think a lot of things can throw off the cook time in this recipe such as amount of milk used, type and size of the baking dish, moisture content of the tomatoes and mozzarella, and starting temp of the eggs and biscuits. Difficulties aside it was very tasty. I can see the base form of this dish - the refrigerator biscuits and eggs - being a very flexible canvas for other potential fillings. A Mexican version would probably work really well for example. You could basically do it any way you might do an omelet.

Can't eat wheat, wondering if how we could substitute some steamed potatoes for the biscuit mix. Cut up a potato and steam it? Bake a potato half-way, cut it up, and include those pieces? But 40 min in the oven might cook up raw potatoes, right?

Biscuits in the US are a dense bread-like food. They're flaky, usually served warm, soft on the inside, and crunchy on the outside. The canned ones are more layered and buttery than handmade biscuits. If they have premade croissant dough at your supermarket, I think that would be a great alternative.

I made this today. The only thing i did different was to use a glass dish to cook in. 350 degrees for 30 minutes. Unfortunately the buiscuts were under cooked and doughy. They were browned on top so I thought it was done. Maybe cast iron heats and cooks the internals better. The flavors were good though.

@@cXtm I think the issue would be that anybody watching that doesn't know could see him doing this and think it's OK. I would hope he doesn't do this at his restaurants. I've eaten raw eggs in my younger years so this likely wouldn't do any serious damage but it could certainly make somebody quite ill for several days. It should have been mentioned in the video TBH.

Also, if we're sticking with Sam's config here, dotting some marinara along with the pesto would be good too - or maybe lay down a floor of marinara sauce before dumping everything in? 🤔

I'm guessing as long as you have the biscuit and egg mixture, you could modify the rest pretty much endlessly. You could do different cheeses, mushrooms, asparagus, different vegetables, different meats like breakfast sausage or chorizo or pepperoni. I think you'd want something relatively spicy to hold up to all the bread and egg, though. I bet some leftover lobster could be awesome in this too.
