Yesterday I was driving and listening to our local Public Radio station. A lady was describing the best recipes for cooking healthy food on a budget, she started with a Spanish omelet with potatoes, and she called it Tortilla de Patatas al Ajillo. She went on to describe what you made in your last video, exactly! I suspect she's also a fan of "Spain on a Fork". 😃 My son is also a fan, though he hasn't watched yet, but he sure has enjoyed the new dishes I've been making since I found this channel.

It’s a good recipe for days where you don’t have the time, energy or desire to do elaborate cooking but still would like a proper meal. Also the ingredients are all very basic so you don’t need to go shopping just to be able to prepare this one meal.

Love this, will try soon. Did your vegatable paella last week turned out really well. took it along to a Bbq, wrapped in many tea towels and silver foil to keep hot, it was very popular and fitted in with other foods very well. Used chickpeas as I had used all my butter beans, think I prefer it with CPeas. Was asked for recipe. Thanks for your posts xx

@@marycallahan2398 Yea, I dont mean to be an ass. But I have tried several of these recipes and they're just boring. Common flavors, no creativity. What I mean about culinary training, is this. Notice he puts the garlic in with green peppers and onions? Garlic burns quickly and is generally added last when sautéing veggies. Normally around 30 seconds, just about when you can smell the garlic. If trained he would know this. Also they way he tosses food in the pan. He does it like an amateur. Bottom line is, formal training is not always necessary. But this food could use a trained chefs touch. Flavors arent great.

@@AlbertAguirre TY for your reply. I read recipe comments because often, someone has a helpful suggestion. However, just as often, people post unnecessary or rude remarks. I agree with you 100% about when to add garlic, which I figured out through trial & error. Yet I still find professional cooks insisting on putting garlic into hot oil @ the beginning of a recipe, which results in bitter, burnt garlic & oil. And yes, a lot of novice cooks, when sauteeing, stir the pan contents way too much. As far as 'boring' flavors, I think the appeal of this YT channel, for novice cooks, is that the ingredients are familiar & easily found. Also, I've known lots of people who thought even S & P was 'too spicy!' including a couple of executive chefs I worked for who wouldn't tolerate or permit certain spices/herbs because of their bland palates. Recipes aren't written in stone & can easily be adjusted to amp up the flavor profile. Most recently I found a curried eggplant recipe which said that it 'wasn't for the faint-hearted' simply because it had a tablespoon of garlic & ginger & a few traditional Indian spices. Anytime I see a recipe which calls for a clove of garlic, I have to laugh & I triple or quadruple the quantity. Then again, that reminds me of my father who was raised on my Irish grandmother's bland, boiled dinners. Even the merest hint of garlic would piss him off. Sorry, I digress...my point is that it seems like you have some cooking experience, so if you have any ideas about making the recipe better, whether it's a technique or adding to the flavor, that would be great for you to share. Even though I have been cooking for decades, I always want to learn something new to improve the end result. Even this YT channel, (BTW, Albert Bevia states that he is a self-taught, home cook) has taught this old dog a couple of new tricks. I've had professional 2 year culinary training, apprenticeship, attended classes taught by famous chefs, had fabulous meals @ fine-dining, world-class restaurants. But then again, the most memorable meals & recipes have come from the most humble, generous, & yes, untrained, home cooks...an elderly Native American neighbor, African-American neighbors, a shop keeper who was a refugee from the Viet Nam war, a co-worker's wife who was a Cambodian refugee, or from small church groups...Sharing conversation, food, & recipes are a way to maintain our sanity & humanity. All too often the anonymity of the internet allows people to spew unkind words rather than sharing knowledge & being helpful.

On our three previous trips to Spain, my impression at the time as an American was that the food was generally bland though I liked the Fabada in Asturias and the Cocido madrileño made for us by friends. However, your channel has completely overturned my previous prejudices and contributed to the long-term welfare of our family.
