✏️00:49 Whole Grain Bread without Cornstarch Maxi Slices
Ingredients:
- 250g quinoa flour
- 100g buckwheat
- 50g potato starch
- 4 flax eggs
- 2 tsp baking powder
- 9g ground psyllium husk
- 250ml water
- 50ml oil
- 7g instant dry yeast
- Salt to taste
- 2 or 3 tablespoons honey 🍯
✏️14:07 Gluten-Free Bread Loaf without Ingredients:
Preferment:
- 200ml warm water
- 5g or 6g (1 tsp) instant dry yeast
- 1 tbsp honey
- 150g flour mixture (see video)
Flour Mixture:
- 200g cornstarch
- 75g whole rice flour
- 50g yucca or potato starch
- 9g or 10g ground psyllium husk
- 1 tbsp + 1/2 chickpea flour
- 1 tsp salt
Liquids:
- 1 tbsp apple cider vinegar
- 130ml extra water (add gradually, you don't have to add all if the dough becomes too liquid)
- 2 or 3 tbsp vegetable oil
Bake: 200°C top and bottom heat, with steam (you can place a container with water in the bottom of the oven or spray water on the tray) knead, lactose-free, and egg-free
Ingredients:

- 50g chickpea flour
- 60g potato starch
- 40g cornstarch
- 300ml water (may vary depending on the flours)
- 6g instant dry yeast
- 10g or 12g ground psyllium husk
- 4 or 5 tbsp vegetable oil
- Salt to taste
- 1 tbsp honey or sugar

Ingredients:
- 85g rice flour (approximately 7 tbsp)
- 185g cornstarch or corn flour (approximately 12 tbsp)
- 30g quinoa or chickpea or lentil or buckwheat flour (approximately 3 tbsp)
- 50g mashed potatoes (1/4 cup)
- 5g instant dry yeast (1 tsp)
- 3 tbsp brown sugar or honey (reserve a little for the yeast)
- 1 tsp salt
- 12g psyllium husk (1 tbsp)
- 2 tbsp ground flaxseed (I recommend golden)
➡️ Liquids:
- 110ml + 50ml extra if needed warm water (2/3 cup plus 1 tbsp) I used the same water in which I boiled the potatoes for the puree
- 50ml vegetable oil (4 tbsp)
To paint the bread:
Vegetable milk or water + brown sugar
Times:
45 minutes for yeast
1 hour for the bread to rise
20 to 25 minutes baking at 165°C with a fan
170°C without a fan

Ingredients:
- 5g or 6g gluten-free instant dry yeast (1 + 1/2 tsp)
- 100ml lactose-free warm milk (1/2 cup minus 1 tbsp)
- 1 tbsp honey
- 30g quinoa flour (3 tbsp)
- 160g cornstarch (12 or 13 tbsp)
- 120g rice flour (approximately 10 tbsp)
- 80g yucca starch (6 tbsp)
- 1 tsp salt
- 60g brown sugar (4 or 5 tbsp)
- 2 large eggs
- 60ml vegetable oil (1/4 cup)
- 14g xanthan gum (1 tbsp)
- 120ml water (1/2 cup)
- 1 tsp baking powder
- 1 tbsp apple cider vinegar
- Vanilla to taste (optional)
To paint:
1 egg with a little milk
