"Nước Phở Trong" is a term in Vietnamese which translated to "a Pho broth that is clean and clear".
It is revered in Vietnamese culture and highly sort after.
The opposite of this is a broth that is said to be "Đục" which means cloudy and dirty.
Any serious Pho eater will look at this first. It can tell a lot about how much work went into the broth.
How to achieve a clean and clear Pho broth? Simple. Parboiling.
In this video I go over the basic principle of parboiling and answer a user comment question which is "Do I still need to parboil my beef bones EVEN if I've roasted it in the oven first?"
Update: I have tried a few batches of bone broth without parboiling, i.e roasted in the oven and into water. I have found very little difference.
