Chicken Fried Rice Recipe:
Basmati Rice - 200 grams
Water - For Boiling
Salt - 2 tbsp
Vinegar - 2 tsp
Other Ingredients:
Oil - 2 tbsp + 2tbsp
Eggs - 2 nos
Ginger (finely chopped) - 1 tbsp
Garlic (finely chopped) - 1 tbsp
Spring onion Whites (sliced) - ½ Cup
Carrot (finely chopped) - 2 nos
Beans (finely chopped) - 2 nos
Salt - ½ tsp
Black Pepper - ¼ tsp
MSG - ¼ tsp
Soy Sauce - 2 tsp
Boneless Chicken Cubes - 1 Cup
Spring Onion Greens (chopped) - 2 tbsp + For Garnish
Instructions:
1. Wash and soak the rice for 20 minutes
2. Bring water to boil in a deep pot, add salt and vinegar to it.
3. Add the soaked and strained rice and boil it for 6-7 minutes and strain it immediately.
4. Transfer the rice to a wide pan or tray and let it cool down completely. Refrigerate or let the rice sit about 2-3 hours, preferable overnight. This will ensure that the rice isn’t moist of fluffy anymore
5. Heat a wok/pan, make sure its super hot
6. Add oil, beat the eggs and scramble it on a high flame till it is fluffy. It doesn’t need to colour
7. Transfer the egg to another bowl
8. In the same wok/pan, add oil
9. Add the chopped ginger and garlic and saute till they start to turn light brown
10. Add the spring onion whites and saute for a minute
11. Add the carrot and beans and saute for 2 minutes
12. Add the boiled rice, boiled chicken pieces, salt, pepper, soy sauce and MSG.
13. Mix and toss till all ingredients combine evenly
14. Add the scrambled eggs and toss till it combines with the rest of the ingredients.
15. Add spring onion greens, give it one final toss and take it off the flame
16. Garnish it with spring onions and serve it hot
