When I tell you this is the best chocolate cake in the world, it is the best chocolate cake in the world!
As requested by my niece, for her and my nephew’s birthday I made a chocolate cake with their favourite characters from the cartoon Paw Patrol. In this video, you’ll see how I made and assembled the cake, as well as created and transferred a Paw Patrol stencil to decorate the top of the cake!

🎂 The Cake
½ cup softened butter
¼ cup sugar
4 eggs
1 tsp. Vanilla
1 ¼ cup flour
⅓ cocoa powder
¾ tsp. Baking soda
¼ tsp. Salt
1 ½ cup chocolate syrup
½ cup water
🗺 Directions
In a stand mixer fitted with the paddle attachment cream the butter and sugar until fluffy. Add eggs one at a time, stir in vanilla. In a separate bowl combine the dry ingredients and add to the creamed mixture. Alternate adding the chocolate syrup and water. Beat until combined.
Pour into an 18 x 13-inch pan lined with parchment paper and bake at 350°F for 15 to 20 minutes or until a toothpick inserted in the middle comes out clean.
⛽️ Chocolate Filling
⅓ cup flour
2 tbsp. Sugar
1 tsp. Salt
1 ¾ milk
1 cup chocolate syrup
1 egg lightly beaten
1 tbsp. Butter
1 tsp. Vanilla
🗺 Directions
In a pot, combine the flour, sugar and salt. Over medium heat, stir in the milk and chocolate syrup until smooth. Bring the mixture to a boil, stirring constantly. Cook and stir for 1 to 2 minutes or until the mixture has thickened. Remove from heat and stir a small amount of the mixture with the beaten egg. Whisk until combined and return it all to the pot. Stirring constantly brings to a gentle boil for about 2 minutes. Remove from heat and stir in butter and vanilla. Cool to room temperature before using.
🧀 Cream Cheese Frosting
½ cup butter
2 bricks cream cheese
4-6 cups icing sugar
🗺 Directions
In a stand mixer fitted with the paddle attachment, beat the butter and cream cheese. Reduce the mixer speed to low and add the icing sugar a spoonful at a time. Stir until the right consistency is achieved.

🌟 Review and Tips
1. Lightly grease your baking pan with oil. This will secure the parchment paper and prevent it from moving.
2. The bigger the design the better. Sometimes it’s hard to capture all the details when the stencil is so small and it ends up looking messier than anything else.
3. I make mistakes when piping all the time. It sucks but you can recover! Depending on how big the mistake is, use a toothpick or a spatula to scrape it off. Bonus, if you let it harden in the fridge it’s easier to take off.
4. For this specific cake I tripled the cake recipe and doubled the chocolate filling recipe.
