I love all sorts of enchiladas. Growing up, we never ate at Mexican restaurants and the only type of Mexican food that I was exposed to was my family’s cooking. My mom only made red chicken enchiladas, so I didn’t know that other types of enchiladas existed. I was pleasantly surprised when I learned about green enchiladas, enfrijoladas, enmoladas, and so many variations of enchiladas! After some trial and error, I figured out how to make the best green enchilada sauce (in my opinion). These enchiladas are so good!

INGREDIENTS (makes about 10 enchiladas)
10 Tortillas
Enchiladas sauce:
- 6 tomatillos
- 1 Anaheim pepper
- 1 jalapeno pepper
- 1 serrano pepper
- ¼ onion
- 2 garlic cloves
- ½ bunch cilantro
- Chicken bouillon
- Salt
- Cumin
Chicken:
- 1lb of boneless chicken thighs
- Seasonings: salt, pepper, onion powder, garlic powder, paprika, turmeric, chef merito carne asada seasoning
- Oil
Optional toppings:
- Pickled onions
- Cheese (I used cotija and queso fresco)
- Sour cream
