Hi! Just a little info for you, the rice cakes are not tteokbokki, tteokbokki is the name of a dish they are in, but tteok means rice cake, what you added specifically are garaetteok! Also mirin is not the same as rice vinegar, mirin is a sweet alcoholic rice derivative whereas rice vinegar is non-alcoholic and is more bitter and tangy than mirin. I'd hate someone who doesn't have alcohol for whatever reason to accidentally use mirin thinking it was the same as rice vinegar. Hope this info helps!

It's mainly that the miso gets bitter if you boil it, that's why you should only stir it in once it's off the heat

I've made the Miso Pasta twice now and it's soooooo good. I've fried leeks in sesame oil and garlic to mix in instead of spinach, and then roasted squash and carrots the second time. Both perfection. Thank you! 😍

Hi Mina! Your book is absolutely amazing in every way! I'm not vegan, but after making lots of your recipes I definitely want to switch to a vegan diet. When I watch your videos it's like i'm watching a mini film (thanks to your curated editing skills) BTW, new videos I'd like to see are recipes that don't require an oven, food processor & blender.Maybe that's too much to ask for 🙃🤗😆

heyy! i got ibs too, it might be an idea to look into different cuisines! my mains are vietnamese & thai, but i can definetly have italian foods if i go glutenfree for the pasta. If i can help more lemme know!! my main lesson has been; the more time my food gets the better. thus, cheese that is 40+ i can handle better then others, same with bread that has had TIME. (:

hi there! whenever i make pasta sauce (tomato, bolognese or any other) i just make A LOT as it’s not really more of an effort and then freeze the leftover sauce..while defrosting the only thing you need to cook is the pasta or noodles but you can also have the sauce with bread..i also tried freezing soup (potato, pumpkin, vegetable, any broth,..) and it works great! you can also freeze already baked cake (in slices) and defrost it in a toaster/pan. there is definitely more but i hope this was at least a little helpful:))

Also, if you don’t already, slice your loaves of bread (like a whole grain sourdough) and freeze it. Take a slice out at a time and toast it for dipping in frozen soups, etc. like stated above. My favorite fridge friendly thing to make and keep on hand is chickpea salad! I love keeping it in a mason jar in the fridge and spreading it on top of bread i toast. Chickpea Salad: 1 can chickpeas 1/4 avocado oil veganaise 1 tablespoon of Dijon Just smash the chickpeas and stir in the avocado oil mayo and Dijon. Favorite uses are to spread on toast with everything but the bagel seasoning, use it in a sandwich with sliced lettuce and tomato, or dip with crackers. You can add in different things like chives, red onion, etc. Hope that helps!

Oh, and a ranch recipe is to use the avocado oil veganaise (1/2 cup), 1 tablespoon on apple cider vinegar, and 1 tablespoon of Dijon mustard. Add a little sea salt, black pepper, and dill.

The one in the video I found at the store, in Berlin it’s fairly easy finding vegan ones. I made my own kimchi once and it turned out pretty good - however it is a bit of a project takes at least 2 weeks! I‘ll add it to my list of recipes to film tho 🫶
