If you want to bake an airy bread, then this recipe is perfect for you. I actually don't buy bread anymore, baking it yourself is really easy and quick. This recipe is WITHOUT sourdough, but with fresh yeast (only a little bit) and also with spelt flour.

Ingredients:
580 g lukewarm water
350 g wholemeal spelt flour
350 g wholemeal wheat flour
14 g salt
4 g fresh yeast
Preparation:
Mix the ingredients for 15 minutes on a slow speed. Then stretch and fold the dough vigorously, put it in a greased loaf pan (about 30 cm), cover it and let it rise at room temperature for about 4 hours. Preheat the oven to 200° C (top/bottom heat) in time.
Moisten the surface of the dough with water and put the loaf pan in the oven. Bake for 45 minutes.
