Tricolor Rotini with Blistered Tomatoes and Sausage
For those nights where you feel like Italian food, but unauthentically so! Authentic or not, it is absolutely delicious, and that’s a fact! This makes a great weeknight dinner, perfection in less than an hour!

Tricolor Rotini with Blistered Tomatoes & Sausage:
- 1 20oz package Italian Sausage (Hot or Sweet, your choice. A package is usually 5 links)
- 1 tablespoon Canola oil (Or vegetable)
- 1 12oz package Tricolor Rotini (you can sub any small macaroni if need be)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tablespoon tomato paste
- ½ teaspoon dried oregano
- 1 pint cherry tomatoes, cut in half
- 2 tablespoons fresh basil, cut into thin ribbons (chiffonade)
- Salt & Pepper to taste
- Garnishes as desired: pearl mozzarella, freshly grated Pecorino Romano (or Parmiggiano Reggiano or Grana Padano), extra basil
1. In a very large frying pan (I use my stainless wok) on medium heat, add a tablespoon of canola oil and get it hot.
2. Add sausages and cook for 5 minutes per side, then 3 minutes per side. Once done, remove from heat and cover while you prep your vegetation. NOTE: Do not dump out or wash pan, the fond and oil will be used to prepare final dish
3. Once cooled enough to handle, cut sausages into ¼ inch discs
4. You can prepare the sauce while the macaroni cooks
5. In a large pot, cook the rotini to one minute shy of the manufacturer’s directions. Before draining, reserve a half cup of the pasta water. When it’s done, just drain, DO NOT RINSE THE PASTA!
6. In the pan from the sausage, over medium-high heat, add the onions and cook until translucent.
7. Add garlic, oregano, and tomato paste and cook for a minute or so
8. Add tomatoes and cook until they begin to soften
9. Add sausage, reduce heat to medium-low and cook until pasta is done
10. Add drained pasta to pan. Stir well to combine and add the reserved pasta water as needed to form a sauce that sticks.
11. Check for seasoning Salt & Pepper
12. Add basil, stir well, and serve
13. Enjoy!
