My late dad used to make this. He was Sicilian and so it came natural to him, though personally I never cared much for fish and pasta. Still made me smile to see you like it.

@@vincenzosplate I have made it several times but I'm the only one in my family who likes it so it's been quite a while since I made it. My sister makes it too and one of her kids also makes it. So in a way the tradition is continued. My grandparents were from Santa Christina Gela which is a small village near Palermo. They had 9 kids including my Mom who was the middle child with 2 older brothers, 2 older sisters, 2 younger brothers, and 2 younger sisters. You don't get more in the middle than that! Thank you for posting your videos. I really enjoy your content.

Sultanas(raisins) are wonderful with many dishes. I think they would be great with this dish! They would mellow out the sardines. Some people don’t seem to like the idea but I can’t wait to try it.

Not Italian here. I'd say 100 g per person, but make a little extra for people with larger appetites. I like sardines, with limits. Love fennel.

Sicily is about as North African as you can get. You know it's a true Sicilian recipe if has raisins, pine nuts and capers in a sauce that isn't red. Saffron and fennel in the brew is a tad eccentric to our way of cooking, but hey, why not?

As a Chef, I prepare a similar dish with Sardines, and as great as Saffron is but unattainable to many, what I then use is Tarragon, and any Fish dish is always fantastic using not fresh, but dried Tarragon because when dried, it triples the great taste and of course, Shallots or simply diced Onions, absolutely delectable dishes!

I have done almost exactly this for many years - it's great! But I disagree about making sure the sardines don't break up - if you're feeding 4-5 people they need to break up enough so everyone gets a fair amount 1) toast some breadcrumbs, and when cold mix with finely grated parmesan 2) onions, anchovies and a tin of sardines in extra virgin oil (squirt of tomato optional, chilli optional) 3) crushed garlic then some water to prevent burning 4) I put oat bran now - this soaks up the flavours and gives you the texture of toasted breadcrumbs in the sauce as well (plus good for digestion and heart!) 5) I've done this with Dill as the herb Toss the pasta in Serve with the breadcrumb/parmesan mix In the UK we have a thing called Pilchards - these are just big sardines - and a 400g tin of 'pilchards in brine' costs less than £2. Easily enough to feed 4 people. I love tins of pilchards - they're a great base for all sorts of fishy things (e.g. fry one large onion, 2 x garlic, 1 x 400g tin of pilchards (don't drain it!), then 3 x Mutti 400g tins, simmer for 20mins - great for freezing in portions!)

It’s refreshing to see a chef present a recipe with sardines. This fish seemed to be much more popular in America a few decades ago. I would also be interested in recipes from Italy that just use anchovies. Some people get them on pizza, but I bet there are some really good pasta dishes that use them in addition to this one. I'm a history nerd, and recipes like this are absolutely ancient (pre-Columbus). Tomatoes came from the Americas and Italian recipes used dried fruits like this before the introduction of the tomato. Beautiful to see such a medieval recipe.

A tip from an Iranian where we have probably most experience with Saffron: grind it first with some coarse salt and then pour hot water over it. Not only will you have a much more intense color, but also best thing about saffron: great taste and aroma

My Mama (from Sicily) used to make this a few times a year - I loved it....which is a bit surprising as I am not a big seafood eater. But the most important thing was the fennel - it had to be wild fennel picked at just the right time when the fronds were tender ....... that cultivated fennel is just pallid in comparison. Here in Australia it is now impossible to harvest wild fennel and the reason why it was a occasional meal in our home Now for the recipe for Sarde Agro Dolce

Fennel and fish are always friends in cooking and that's probably what is helping keep the sardines in line. Usually when you make fresh fish stock fennel is used. Fennel is an interesting flavor component, it can kill strong smells or at least blend them into things more seamlessly. Think of a pork sausage with fennel seeds vs without, the ones with almost never have the slightly unpleasant part of the pork flavor profile. It's funny that this uses bread crumbs to stretch food and save costs in the origin story, but the saffron and the pignoli nuts in this would cost a fortune. I have seen the pignoli nuts up to $90/lb in new york. When I was a kid you used to be able to buy scoops in brown paper bags to snack on.

You're absolutely right-fennel and fish are a perfect match, balancing out the stronger flavors. It's fascinating how ingredients like breadcrumbs were used to stretch dishes, yet saffron and pignoli nuts can be so expensive now. Times have definitely changed, especially with pignoli nuts reaching those prices! The contrast between the humble and the luxurious in traditional dishes is part of what makes them so special.

Just returned here from some YT-channels with insane food health claims, like from a ghost train ride, and I can feel my soul get healed again over Vincenzo's delicious pasta dishes. I like the combination of Pasta and Sardines and do it by myself in different preparation methods, mostly in a more spicy manner. The flavour of Sardines is even strong enough to stand some Peperoncino and/or Garlic. Instead of grained salt I prefer Anchovies conservated in salt and a saturated brine, which I let desintegrate very slowly in the Olive Oil. And well yes, sometimes I do need dishes with a taste that reminds me about the scent of a port. Strangely enough for a landlubber like me...

Wonderful dish. If you cant get fresh sardines, get them canned in olive oil. Canned is very salty, so taste while cooking.

You had me at fennel leaf! This recipe gives me more reason to keep fennel around. So far I just use powered fennel in my ground beef to taste like Italian sausage. My spin on this recipe is to leave out the onion, double up on the garlic, keep the nuts but not the sultanas. Sprinkle fresh parsley at the end but no toasted bread crumbs. Though I'm sure the complete recipe is so Sicilian and delicious I don't want too much getting in the way of that beautiful anchovy taste and chunks of sardines. I'll keep the tomato paste for the look it gives the spagett, and thinking of investing in some Saffron too🤔. When I look down at the plate I want to see a simple, rustic and uncomplicated dish , one that is hiding layers of flavors I've never had together on one plate (where is the kissing fingers emoji when i need it?!).

Went to Sicily this summer. Visited 5 towns on the eastern part (Taormina, Syracuse, Noto, Modica, Ragusa). I have not seen this dish once. Looks incredible though ... i must try it one day. *But I have seen carbonara made with ham, cream na cheese (no mention of ehat kind of cheese)

Sounds like you had an amazing trip! While pasta with sardines is more common in western Sicily, especially around Palermo, it’s a must-try if you ever find it. As for that carbonara, it’s always interesting to see local variations, but nothing beats the original with guanciale and Pecorino Romano. If you do try the pasta with sardines, I hope you’ll enjoy it as much as the sights in Sicily!

One of the best Italian pasta dishes I know! I've cooked this a few times. At first I was skeptical about the raisins. But it's really a great dish! 👍👍 P.S.: If you don't have fennel greens at hand, you can use mortared fennel seeds or a small splash of Greek "ouzo", which has a similar anise aroma. P.P.S.: One of your best recipes in a long time!

They used Safron in water to deter cats in Morocco. I learnt that in Tangier maybe there are other places where they do that. I don't know if it's just in places in Morocco

if you like copper cookeare, try to have a look Ruffoni, they’re Italian brands snd still made in Italy. they also have an old fashioned version which using a tin lining for the interior rather than aluminium and stainless steel few David Jones store sell them

I personally like Sardines quite a lot (I maybe wouldn't say that I love them in particular compared to certain other fish and seafood, but I really love most types of fish and seafood in general, so it's still good) and I'm generally quite a big fan of pasta (and also here, noodle dishes in general; I also love Chinese, Japanese etc. noodle dishes). So this pasta there, whew... I would absolutely LOVE to try it, myself. I am a little on the fence about having some type of raisins in there; they can sometimes work for me, sometimes not, but... Yes. If I get the chance, I would definitely try it, at the very least! It looked absolutely beautiful!

It sounds like this dish would be right up your alley, especially with your love for fish, seafood, and pasta! The raisins do add a unique touch, balancing the savory flavors with a hint of sweetness, but I understand they can be hit or miss. I've had pasta alla sarde in Venice, it was okay, but not a Hail Mary dish. I will definitely give this a try. I suspect that if the sardines are too fishy in the dish, fresh ahi tuna as a substitute (or even shrimp) will convert non believers. (E forse, some lemon zest?) You can make a very simple but tasty fennel salad by adding mint, dried cranberry, evoo +/- balsamic, salt & pepper.

I have heard of this dish but have not tried it. I can get frozen, uncooked sardines quite easily and I assume that the original dish was intended for fresh sardines. The use of fruits or sweet ingredients in an otherwise savory dish is indeed quite Medieval (if not earlier). The original lack of tomato is a hint to its age. It is definitely a Mediterranean thing and largely the result of Moslem influence although the Romans were not shy in blending the sweet with the savory either (and making their equivalent of ketchup out of fermented fish). It all depended on the availability of the ingredients (wars, famines, political unrest, natural disasters and plagues played merry hell with the supply chain") and if you were sufficiently "well to do" to afford the current prices (saffron has NEVER been cheap!). I have several cookbooks of Medieval cooking. I try a recipe every so often. Measurements...good luck! ... "and put to it a goodly amount of sweet butter, and of herbs and of mace and boil... Gotta love it. I know that I would like this dish!

I typically hate fish, but this sounds delicious. Kinda sounds like a Caesar dressing in the respect that the fish is in the background.
