Chef, it looks smashing, of course I made my own beef Bourguignone many times before. It is one of the classics from Escoffier. But really, why did you use pickled pearl onions instead of the fresh ones? for the rest of the ingredients, top notch! that sandwich as is, a tenner all the time. Stop smoking (cough, cough)… Love your channel.

Looks GREAT, onions good, mushrooms toasted not fried GREAT, but adding flour is doing nothing to the flavour other than adding burnt flour taste, detracting from the flavours of and interfering with the Maillard reaction.... It does however obviously contribute a thicken effect. Perhaps Black Garlic in place of normal would give an interesting and special variation... Keep up the great show :)

Looks good---though the title had me thinking this would be a proper burger topped with the signature stewed beef and such for a contrasting, multiplicative experience not unlike how shaved bbq brisket burgers are a wonderful thing that thankfully exist.
