"Tidtad" is Pampanga's version of "dinuguan", a savory dish made with pork offal, stewed in a mixture of pork blood, vinegar, garlic, and chilies. It is best eaten with steamed rice cakes called "puto" for merienda, or with steaming hot rice as a viand.
