Tigre... turned into a doughnut!! 😄 I have a doughnut mold, not a Tigre mold, so I had to seal the holes with dough while shaping, resulting in a perfect doughnut :) So, let's start as I originally intended, like in the video for making Tigre doughnuts~ 😅
The process of browning butter and using egg whites is similar to making financiers, but the taste differs significantly in texture! Tigre, due to the sugar coating on the surface, becomes crispy (beyond crunchy) outside and incredibly chewy inside, compared to financiers which have a firmer exterior and softer inside.
With my recipe, you'll experience an even chewier Tigre! If you want the authentic Tigre shape, use a spatula or spoon to seal the dough after shaping.
Afterward, proceed with the ganache.
When eaten as a doughnut without the ganache, it tastes a bit lighter!
Perfect for tea time desserts, resembling tigers 🐯 Try making Tigre resembling tigers~
*Bake at 356°F for 15 minutes after preheating at 356°F for 10 minutes.
*Store the butter and sugar-coated pan in the refrigerator until use.
*Let the dough rest in the fridge for 1 hour (can rest up to 12 hours).
*After baking, sugar crystals will appear after about an hour. 💛
*It can be stored in a well-ventilated place for about a day. If stored in an airtight container and thawed at room temperature when frozen, it will taste similar to the first day!
Butter 140g
Egg whites 100g (3 eggs)
Powdered sugar 80g (can be replaced with regular sugar, but it might alter the taste)
Honey 15g (can be replaced with syrup)
Salt
Cake flour 40g
Almond powder 90g
Milk couverture 60g (any desired couverture can be used)
Earl Grey tea leaves 2g
Coffee powder 2g (can be substituted with a small pack of instant coffee, ground)
