Together we will learn how else you can cook it to make it delishious. Baked quince, marinated quince, poached quince and quince cake! All this recipes i will show you just in 7 minutes!

First of all, lets carefully wash the quince.
For BAKED QUINCES, let’s take 4 pc, remove skin, cut in half, take out the core, cut in wedges. Put in the tray, add
2 cups (400gr) sugar,
2 cups (500ml) water,
1 cinnamon stick and
zest of 1 orange,
teaspoon of vanilla paste.
Carefully mix, and put in the oven at 180°C (350°F), until quince caramelizes and gets soft. Time to time, baste it with the syrup from the tray and turn it over until ready. Now, let’s make a simple dessert. Supreme the orange. Fan out the quince on the plate, place orange supremes between quince wedges. Add a few tablespoons of cookie crumbs and a portion of ice-cream. Bon appetite!
Next lets marinate the quince! Remove the skin, take out the core, cut in wedges. For the marinade lets take
2 cups (400 gr) sugar,
2 cups (500ml) of apple vinegar,
2 cups (500 ml) water,
10 peppercorns,
12 grains allspice
1 bay leaf
Bring marinade to quick boil and put quince wedges in. When the fruit is soft - take it out and let it cool down. Ready! Try the sweet & sour quince together with a soft cheese. Marinade you can use again, store it in the fridge.
Now, let’s make quince jam. Let’s take 1 big quince (500gr), keep the skin, cut in quarters, remove core and chop in small pieces. Put in the pot add 1 rosemary sprig, cover with cold water, add juice of ½ lemon and bring to simmer. Water should evaporate and quince should become very tender. Then remove rosemary, blend into fine puree. Add 1 cup (200gr) brown sugar, juice of the other half of the lemon. Keep stirring on low heat, until jam is thick enough. Intense taste and aroma will be perfect with blue cheese.
Next lets poach quince in a red wine. Take a big pot, put inside:
1 lemon, zest and juice
1 cup dry red wine
1 Quart (1 L) of water
½ cup (100 gr) sugar
Few drops of vanilla essence
Bring to boil, put skinned and de-cored quince inside. Make a cartouche from baking paper - fold a square piece twice, then fold few times to make a sharp edge. Measure length from the middle of the pot, cut of extra paper and a tip. Unfold and cover quinces. Cook for 15-20 minutes, till tender and take out on the plate, let it cool down. You can re-use syrup or reduce and use as a sauce. Let’s make a cake with poached quince.
Poached quince slice thinly, fan it on the bottom of a cake mould over the baking paper. For the dough, cream
½ cup (100gr) sugar
120 gram butter
Then add one by one:
2 eggs, room temperature
1 ½ cup (210 gr) flour
½ tsp salt
2 tsp baking powder
And in the end, ½ cup (115 gr) sour cream or yoghurt. Mixed dough spread over sliced quince. Bake in 180°C (350F) preheated oven for 40 min, or until cake is cooked through. Take out, cool down, then carefully turn over the mould, take out the cake and cut it. We can plate a slice of cake with baked quince, cookie crumbs, a dollop of ice-cream and candied orange zest petals. Smells delicious! Bonne Apetite!
