This is an easy recipe to follow if you love traditional red tortoise cake otherwise known as Ang Ku Kueh/Kuih. It is the perfect treat for Chinese New Year.
The exterior has a sticky mochi-like texture which is usually coloured orange, red or green. The filling is made of mung beans sweetened with sugar but you can also try desiccated coconut + palm sugar. Below are the ingredients for making Ang Ku Kueh.
Ingredients for filling
- 150g mung beans (washed & soaked for 4 hours)
- 125ml water
- 1.5 tbsp vegetable or shallot oil
- 75g caster sugar
- 1/4 tsp salt
Ingredients for skin
- 250g glutinous rice flour
- 30g tapioca flour
- 1 tbsp caster sugar
- 2 tbsp vegetable oil
- 240ml water
- Orange food colouring
