Piña Colada Custard Topped with Fresh Pineapple:
Ingredients:
For the Custard:
1 can (14 oz) coconut milk
1 cup whole milk
4 large egg yolks
1/2 cup granulated sugar
1/4 cup cornstarch
1/2 cup crushed pineapple, drained
1/4 cup rum (optional, can be substituted with pineapple juice for a non-alcoholic version)
1/2 tsp vanilla extract
1/4 tsp salt
Topping:
1 cup fresh pineapple, diced
2 tbsp brown sugar
1 tbsp butter
1/4 cup shredded coconut, toasted (optional)
Instructions:
1. Prepare the Custard:
1. In a medium saucepan, combine the coconut milk and whole milk. Heat over medium heat until just beginning to simmer, then remove from heat.
2. In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until smooth and pale.
3. Gradually whisk the warm milk mixture into the egg yolk mixture, tempering the eggs slowly to avoid curdling.
4. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the custard thickens and coats the back of a spoon, about 5-7 minutes.
5. Remove from heat and stir in the crushed pineapple, rum (or pineapple juice), vanilla extract, and salt.
6. Pour the custard into individual serving dishes or a large serving bowl. Cover with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Chill in the refrigerator for at least 2 hours, or until set.
2. Prepare the Pineapple Topping:
1. In a skillet over medium heat, melt the butter and add the brown sugar, stirring until the sugar dissolves and the mixture is bubbly.
2. Add the diced fresh pineapple and cook, stirring occasionally, until the pineapple is caramelized and tender, about 5 minutes. Remove from heat and let cool slightly.
Option: The fresh pineapple can be added raw.
3. Assemble and Serve: Can be served in a mason jar as pictured.
1. Once the custard has set, top each serving with a spoonful of the caramelized or fresh pineapple mixture.
2. Sprinkle with toasted shredded coconut if desired.
3. Serve chilled and enjoy your tropical dessert!
