To make turkey jamon you will need:
• Turkey drumstick - 1 kg
• Salt - 1-1.5 kg
• Black pepper - 5 gr
• Curry - 5 gr
• Paprika - 5 gr
• Garlic - 5 gr
• Basil - 5 gr
• Coriander - 5 gr
• Hot pepper - 3 gr
• Sugar - 10 gr
Cooking steps:
1. Remove the skin from the lower leg with a stocking, not completely, only to the thinnest part of the lower leg
2. Leave the skin hanging on the bone and gently in a circle so as not to touch the skin, make a deep incision along the border of the opened meat
3. Get all the ossified veins out of the meat
4. Simultaneously with the removal of the veins, cut the film from the meat
5. Mix spices (black pepper, curry, paprika, dry garlic, basil, coriander, hot pepper and sugar).
6. Thoroughly roll the turkey drumstick in the pepper mixture
7. Salt the meat liberally
8. Stretch the skin over the meat with a stocking
9. Roll the shins in the skin in a mixture of peppers
10. Cover the shin with a thick layer of salt (to form a salt cocoon)
11. Send to refrigerator for 5-6 days
12. Remove from salt
13. Shake off excess salt
14. Wind in cheesecloth and tie a loop of twine on the thinnest part of the lower leg
15. Hang in a dry, well-ventilated and cool (10-12 degrees) room for 30-40 days
