When we arrived in the country, we saw in restaurant and cafes ladies preparing them, so we approached to understand more about this food.
Gozleme is a type of Turkish street food that comes from the Seljuk era. It is usually eaten with chai or ayran, natural uyogurt with water.
It can be found in bars, restaurants, and it is usually cooked live by women in these places, but the best experience is with families in the villages. No matter what group they belong to: Arabs, Kurds or Turks share this food with their families or friends. It is a good opportunity to connect more with the people and get closer to the culture of the place.
The most popular flavors are peynirli (cheese), patatesli (potato) or ıspanaklı (spinach). We prefer patatesli, which has potato and onion.
How are they prepared? Gozlemes are cooked with a little cooking oil, margarine or butter on a griddle called sac which is large and a little convex, with a heat source or fire underneath. After 5 minutes, they are turned over and cooked a little longer. Before serving, they are brushed on top with melted butter....
