Dear Friends, This Sambar is Part of Udupi cuisine, it's very famous in South India. In Udupi hotels they call it tiffin Sambar. I have used the fresh home ground spices to make the magic masala for this recipe. its aroma will fill the house & activate your test buds. This Sambar doesn't use any Vegetables & use very less dal but have very thick consistency. Enjoy the recipe :)

Ingredients:

Toor Dal- 100 grams
Turmeric powder- 1/4 tsp
Garlic cloves- 3
Coriander seeds- 1 tsp
Chana dal- 1 tbsp
Cumin seeds- 1/2 tsp
Pepper- 1/4 tsp
Dry red chillies- 3
Onion- 1/2
Tomatoes- 2
Grated Coconut- 1/2 tbsp
Mustard seeds
shallot onions- 10
Green chillies- 2
Sambar Masala- 1 tsp
coriander leaves
Salt
Oil
Preparation:

Take 100 grams toor dal, wash it well & soak it for 10 mins. Pour it in the Pressure cooker pan, add 2 cup water, 1/4 tsp turmeric powder, 3 garlic cloves.
Mix it well, close the lid & cook it for 3 or 4 whistles. Once its cooked keep it aside.
In a heated Pan add 1 tsp oil once it is heated, add 1 tsp coriander seeds,1 tbsp chana dal,1/2 tsp cumin seeds,1/4 tsp Pepper, 3 dry red chillies & saute well.
Chana dal has to be sauted till it turns golden brown. Add 1/2 finely chopped onion & saute well. Once onion fried add 1/2 chopped tomato & saute well.
I have used 2 tomatoes for this Sambar, Half is used now rest of the tomatoes will use it later.
Once onion & tomato is fried well, add 1 tbsp crated coconut & saute well. If you do not have coconut skip it, its optional only.
Once all the raw smell disappears, stop the flame allow it to cool down. Grind it well to make a masala puree by adding very little amount of water.
Special Masala for the Sambar is ready. Keep it aside.
In a heated Pan add 2 tbsp oil once it is heated, add mustard seeds, 10 shallot onions, 2 spliced green chillies & saute well.
Once onion is fried well, add 1.5 chopped tomatoes & saute well. Add curry leaves & saute well.
Once its fried well, add the grinded masala puree to this & mix it well. This magic masala will give nice aroma & taste to the sambar.
Add the Boiled Dal to this & add required amount of water. You can enormous amount of water as the sambar will get thicker as time goes by.
Add little amount of tamarind puree to this & mix it well. Add 1 tsp Sambar masala , salt & mix it well. Allow it to boil for 10 mins.
After 10 mins boiling, add finely chopped coriander leaves mix it well & switch off the flame. Delicious Sambar is ready.
As we have added fresh grounded spices to make the masala, taste & aroma will be really good. it goes well with Idly, Dosa especially pongal.
It takes about only 15 to 20 mins to prepare this delicious Sambar.
