If you're making just one piece, reduce the amount of batter accordingly. Our recipe can handle up to about four pieces. Also, after dipping the meat in oil, be sure to shake off the excess and lightly coat it with flour before dipping it into the batter.
Temperature control and timing for frying are key.
After dipping in oil and sake, be sure to pat dry with paper towels to remove any excess moisture before coating with flour. We cover this step in the video.
