Presentation is the key. They always pours the egg on top as soon as it is cooked sometimes almost raw. Giving it that vomited look. This is the way to do it, the pork is the star.

I was wondering about the doneness of the pork but it looks done to me...more done than those eggs. I'd love a Po'boy sandwich with one of those chops...lettuce, tomato, pickled tomatoes and Duke's mayo.

In Japanese cuisine they often don’t cook to well done, but it’s safe, because their food industry is safe, less processed food and corrupt food processing. They also eat huge amounts of raw - raw fish, some almost raw meat (meat sushi and tarte) and even raw egg cracked over a bowl of rice!

Assuming they're all from that giant piece in the beginning, its a boneless pork loin ( not tenderloin, the part the pork chops are from )- so you're correct, as the babyback ribs are the bones that would be in the pork chops! PS this video made me go get a pork chop for lunch :d

Блюдо в принципе элементарное.Один вопрос, почему кусок из свинины не доведен до готовности, это же очень опасно.Свинину, курицу необходимо подвергать термической обработке до готовности.Это закон технологии питания, патогенная опасность.

Свининка явно не прожарена, а это чревато для желудка. Чуть тоньше нарезал бы и было б норм, а так я бы не рисковал!
