Vangi Bath Masala Powder:
Ingredients:
* 1-inch cinnamon
* 4 cloves
* 3 cardamom pods
* 1 mace
* 1 tsp poppy seeds
* 2 tsp coriander seeds
* 2 tsp urad dal
* 2 tsp chana dal
* 1 tbsp cumin seeds
* 1/2 tsp fenugreek seeds
* 2 1/2 tsp dry coconut
* 3-4 dried red chillies
Instructions:
* In a heavy-bottomed pan, dry roast the cinnamon, cloves, cardamom pods, and mace until aromatic. Keep aside.
* In the same pan, dry roast the poppy seeds until they start to pop up. Keep aside.
* In the pan, heat and add coriander seeds, urad dal, chana dal, cumin seeds, and fenugreek seeds. Roast until the lentils turn golden brown.
* Now add dry coconut and roast slightly. Cool completely, ensuring all the spices are not burnt.
* Dry roast the dried red chillies until they puff up. Cool completely and transfer the roasted spices to a blender.
* Blend to a coarse powder without adding any water. Vangi Bath Masala is ready.
Vangi Bath Rice Preparation:
Ingredients:
* 2 tbsp oil
* 1 tsp mustard seeds
* 1 tsp cumin seeds
* 1 tsp urad dal
* 1 tsp chana dal
* 2 tbsp peanuts
* Few curry leaves
* 1 dried red chilli
* 2 brinjals, diced
* 1/4 tsp turmeric powder
* 1/2 cup tamarind extract
* 1/2 tsp salt
* 3 cups cooked rice
* 1/2 tsp jaggery
* 2 tbsp coriander leaves, chopped
Instructions:
* In a large kadai, heat 2 tbsp oil. Add mustard seeds, cumin seeds, urad dal, chana dal, and peanuts. Saute and splutter on medium flame.
* Now add curry leaves and dried red chilli. Saute well.
* Further, add diced brinjals and saute for 2 minutes.
* Also, add turmeric powder, tamarind extract, and salt. Mix well, cover, and boil for 5 minutes.
* Now add 2 tbsp of prepared vangi bath masala powder and jaggery. Mix well.
* Add cooked rice and salt. Mix well, ensuring the masala is well combined with rice.
* Cover and simmer for 5 minutes or until the flavors are absorbed well.
* Finally, add chopped coriander leaves and enjoy Vangi Bath with raita.
