Here is an easy peasy recipe. I used the Banza protein pasta. That is an easy way to make sure one is getting all their nutrients in. I would also suggest using any veggies you want. This would be great to throw in any leftovers as well. Make it your own.
Basic Vegan Alfredo
*White beans, cannelini or other or 1.5 c
*Nutritional yeast, 2-4 T
*Veggie broth, 1 c
*Garlic, 2 to 3 cloves
*Onion, 1/2 or dry equivalent
*Lemon juice, 2 T or white miso (1 T)
*Herbs: italian, fresh basil, parsley, etc.
*Salt and Pepper, to taste. Be careful if using miso, it is salty
*Vegan butter, optional
While pasta is cooking (make sure it is al dente, it will cook a bit more when you add all back to the pot. Simply combine all but the butter in the blender. Mix until smooth and adjust for taste. If too thin, add more nooch. When noodles are done, drain, and add sauce to pot with noodles and veggies. Heat back up. Serve with more nooch on top and/or any vegan cheeze of choice. Enjoy!
