Ingredients:
1 cup chana dal (split chickpeas)
2-3 dried red chilies (adjust to taste)
1 inch ginger, chopped
3-4 cloves garlic
1 medium-sized onion, finely chopped
2-3 green chilies, finely chopped
A handful of curry leaves, chopped
2 tablespoons chopped coriander leaves
1 teaspoon fennel seeds
Salt to taste

Instructions:
Preparation of Chana Dal:
Wash the chana dal thoroughly and soak it in water for about 3-4 hours. This will soften the dal and make it easier to grind.
Grinding:
Drain the soaked chana dal and transfer it to a blender or food processor.
Add dried red chilies, ginger, and garlic to the blender.
Grind everything together into a coarse paste without adding water. You may need to scrape down the sides of the blender a few times to ensure even grinding.
Mixing:
Transfer the ground mixture into a mixing bowl.
Add finely chopped onion, green chilies, curry leaves, coriander leaves, fennel seeds, and salt to the mixture.
Mix everything well until all the ingredients are evenly distributed.
Shaping:
Heat oil for deep frying in a kadai or frying pan over medium heat.
Take a small portion of the mixture and shape it into a small round ball.
Flatten the ball slightly to give it a vada shape. Repeat with the remaining mixture.
Frying:
Carefully slide the shaped vadas into the hot oil, one by one.
Fry them in batches, making sure not to overcrowd the pan.
Fry the vadas until they turn golden brown and crispy on all sides. Make sure to flip them occasionally for even frying.
Once done, remove the fried vadas using a slotted spoon and drain excess oil on paper towels.
Serving:
Serve masala vadas hot with coconut chutney or any dipping sauce of your choice.
