7 quart pan or larger for mixing ingredients
recipe yields 3 loaf pans 9x 5 x 2,3/4
preheat oven to 275
place a 8x8 cake pan(or approx sized) filled with water in the oven for moisture production
line the baking pans with tin foil
1lbs chopped candied cherries
1 lbs chopped candied pineapple
1.5 lbs chopped dates
2 quarts chopped pecans
mix,,2 cups all purpose flour
1/2 tsp salt
2 tsp baking powder
coat fruit/nut mixture well with the dry mix
next
beat 4 eggs until frothy ,while slowly adding in 1 cup of sugar
next mix the wet mixture with the dry mixture,,making sure they are thoroughly incorporated
let stand for 1 to 2 hrs
spoon equal parts into the 3 foil lined pans
(do not coat with nonstick spray or flour)
cook time approximately 1hour 15 minutes
do not over bake,,remove while still soft to the touch
